Reveal Broad Advances in Food Nutrition Thru Use of Lemon Juice
Broad advances in the science of food preservation and nutrition, through the use of lemon juice, were revealed in the July issue of Nutrition Research reporting on work done by the Research Department of the California Fruit Growers Exchange.
When properly used with many processed foods, lemon juice accomplishes three principal results: 1. It increases flavor. 2. Helps to retain natural flavor or "freshness." 3. Eliminates strong or foreign odors.
To the late R. D. Nedvidek goes full credit for the success of this valuable research work, according to W. E. Baier, manager of the Research Department of the Exchange.
"Rediscover" Lemon Juice
"It is no exaggeration to say that Mr. Nedvidek 'rediscovered' lemon juice," states Baier. "Food flavor and appearance had to show improvement after the addition of lemon juice or it failed to receive his approval."
The research work done by the Exchange proves that only with lemon juice are the full beneficial effects of food preservation and nutrition accomplished. It has been known for some time that citric acid and ascorbic acid were of some benefit and synthetic products combining both had been commercially offered for freezing use. It remained for Exchange research to prove that only in lemon juice were the two elements properly combined with other factors to accomplish maximum results.
Applies to Fish
The beneficial effect of lemon juice applies particularly to fish of almost all types. The juice may be applied immediately before freezing or before cooking. The ability of lemon juice to retard development of strong odors is very noticeable in the freezing of fish.
The flavor of chicken, either commercial or home frozen, is markedly improved by pre-treatment with dilute lemon juice. This is done for a period of 30 minutes before the chicken is fried.
Both corn-on-cob and whole grain corn show great restoration of natural flavor when treated with lemon juice before cooking. Frozen apricots and frozen peaches also pick up natural flavor when thawed in dilute lemon juice.

Bicycle Rodeo
At County Fair On Opening
Several thousand young county cyclists are expected to attend the big Bicycle Ride and Rodeo to be staged fairgrounds in connection with 1949 Orange County Fair opening day, Thursday, August.
This special event is scheduled by the fair mankind in the interest of the nation. "Bicycle Safety" program Hammatt of Anaheim will charge of the event in coorid with local traffic police members and bicycle dealers throughout the county.
Admitted Free
All youngsters and bike riders, up to 18 years, will be admitted free to the grounds on this day, according to manager L. A. (Dan) Pat.
As added attraction for grownups, all adult cycle being invited to visit the Range County Fair on Sunday gust 21, at no admission or riding bikes. Many cyclists members throughout California are expected to this event.

Bicycle Rodeo At County Fair On Opening Day
Several thousand young Orange county cyclists are expected to attend the big Bicycle Roundup and Rodeo to be staged at the fairgrounds in connection with the 1949 Orange County Fair on opening day, Thursday, August 18.
This special event is being scheduled by the fair management in the interest of the nation-wide "Bicycle Safety" program. Y. F. Hammatt of Anaheim will be in charge of the event in cooperation with local traffic police departments and bicycle dealers in cities throughout the county.
Admitted Free
All youngsters and teen-age bike riders, up to 18 years of age, will be admitted free to the fairgrounds on this day, according to manager L. A. (Dan) Patch.
As added attraction for the grownups, all adult cyclists are being invited to visit the 1949 Orange County Fair on Sunday, August 21, at no admission charge if riding bikes. Many cycle club members throughout southern California are expected to attend this event.

Publish '1,000 California Place Names' at U.C.
The Gold Rush Edition of 1,000 California Place Names by Erwin G. Gudde, has just come from the University of California Press ($1.00).
This book presents the stories behind the naming of important cities, counties, mountains, rivers, lakes, capes, and bays in the state. It is paper-bound and was designed with California tourists in mind.
First published in 1947, "1,000 California Place Names" has been thoroughly revised.
Its author, an associate professor of German in the University of California, Berkeley, has also written "California Place Names: A Geographical Dictionary," which covers the same subject more extensively and thoroughly. This book was published last spring by the University of California Press ($10.00).
Unemployment Drops Slightly
Sacramento, (WNS) — Unemployment insurance claims dropped slightly for the week ending July 21, according to a report issued today by the State Department of Employment.
In the Santa Ana office, a total of 3,608 persons filed claims for insurance, and the report indicated 2,324 were paid.

For the state as a whole, 310,400 unemployment insurance claims were filed during the week, and 204,395 paid. This compared to 323,044 filed the week previous, and 213,589 paid.
New claims for insurance also dropped slightly, according to the report, with 30,421 filed compared to 31,620 the previous week. For the corresponding week a year ago, 23,177 persons filed new claims.
Utility Property Values in County Increase 11%
Sacramento, (WNS) — Assessed valuation of public utility property in Orange county for 1949 totals $24,262,440, according to announcement made by the state board of equalization today.
The board said this compares to $21,906,930 valuation in 1948, an increase of $2,355,510, or 10.75 percent.
Public utility property is assessed by the board of equalization for local tax purposes, and rates payable are the same as on property assessed locally. The board estimates the public utility property assessed will bring approximately $80,000,000 in revenues to the state this year.
For all counties, public utility property is assessed at $1,528,653,-220 this year, as compared to $1,-368,716,310, an increase of $159,-936,910, or 11.60 percent over 1948. The board said the assessed valuation figure this year was at an all-time high.
County Industrial Accidents - 2,833
Sacramento, (WNS)—The wide extent of industrial injuries in California was shown today in a report made by the state department of industrial relations on accidents during 1948.
The department said that in Orange county, there were 2,833 persons injured during the year as the result of industrial accidents.
Throughout the state, 142,315 accidents were reported to the department during the 12-month period.
