Cold or hot, it's as tasty and rich a dish as a man could wish for. ENGLISH BEEF AND KIDNEY PIE 1 lb. beef chuck ½ lb. beef kidney 2 medium onions 3 medium potatoes 1 teaspoon salt ½ teaspoon pepper Pastry 1 tablespoon flour Start your oven at 350F or moderate. Cut up beef and kidney into bite-size pieces (if you do not like your kidney very strong, soak it in salted water half an hour. Otherwise proceed.) Chop up onions and potatoes and place all in a casserole with just enough water to cover meat and vegetables. Add salt and pepper. Bake until beef is tender when pierced with a fork (probably 2½ hours). In the meantime, run up enough pastry (1 cup of flour or a mix) to cover top of the casserole. Before you put the pastry in place, be sure to make a hole in the top for steam to escape. This helps to keep pastry from getting soggy and to prevent liquid from boiling out. If you want to adorn your pie, you can make little pastry butterflies with the odds and ends of your pastry. This is how: take a thin, small oval of pastry, pinch together in the middle and place around the edge of the pastry top. When beef is tender, sprinkle top lightly with flour, add more water if meat is dry, and lay pastry on top. Raise oven temperature to 450F or hot. Return pie to oven and bake 15 minutes more or until pastry has turned a golden brown. Serves 6. It's Always Time For Christmas! You’re happy to be alive, and the Christmas Carols on the radio fill you up with the spirit of giving. You’d like to give everyone in the world a present. Keep it that way throughout the year.
