Fruit breads, sliced thin, make good dessert sandwiches. A fig bread stays moist and fresh for the next day and the next. The recipe is a quick one using baking powder as leavening. Sift two cups sifted enriched flour with four teaspoons baking powder, one teaspoon salt, and one-half cup sugar. Add one cup of finely chopped figs. Combine one cup milk, one egg, beaten, and one-fourth cup melted shortening. Add to flour mixture, mixing only enough to moisten flour. Pour into greased loaf pan, four and one-half by eight and one-half inches. Bake in a moderate oven (350 degrees F.) about one hour and 15 minutes. Yield: One loaf. This bread, like most fruit breads, slices best when a day old.
