GAZETTE'S COOKING SCHOOL RECIPES
FIRST DAY
Beef Tongue Plquant
Cover a fresh Wilson's beef tongue with water and add two teaspoons salt. Cover and simmer one hour to the pound. Cool in liquid. When cool enough to handle, peel off skin. Dust with seasoned flour and brown in 2 tbsp. Crisco. Combine 1 glass grape jelly and 1 cup hot water. Mix thoroughly and pour over tongue. Cover and simmer 40 minutes. Turn occasionally. Pot roast may be glazed by this method.
Lark Orangeade Pudding
1 can Lark orangeade concentrate,
3 cups water,
Juice and grated rind 1 lemon (if desired),
4 tbsp. corn starch,
2 eggs scrambled.
Bring liquid and lemon juice and rind to a boil. Dissolve corn starch in ¼ cup cold water. Add egg yolks and beat lightly. Pour this corn starch mixture into boiling liquid and cook at low temperature for 3 min. after it bolls vigorously. Pour pudding over stiffly beaten egg whites, fold in gently. Chill.
Rice Delight
½ lb. Wilson's small link sausage cut in small pieces,
1 medium onion, ½ Bell pepper, 1 cup celery (diced fine),
2—10c cans chicken soup,
1 can mushrooms,
½ cup liquid,
1 tbsp. Worchestershire sauce,
1 cup dry rice.
Brown sausage in pan, then cross in the top of each with scissors. Bake in a hot oven of 425 degrees for 25 min., cool, and fill the cross on top of each with white icing. Makes 2 doz. buns.
Nests
Boil fine egg noodles in salted water to which green coloring has been added. Drain thoroughly, allowing to dry a few moments on paper towelling. Line muffin tins with noodles to form nests. In each muffin tin drop one raw egg. Place in oven at 350 degrees until egg is set.
Bacon Rolls
Spread desired number of Wilson's frankfurters with preferred seasoning, such as mustard, horse radish or chili sauce, fold halves together and around each frankfurter roll one strip of Wilson's bacon, holding it in place with toothpicks. Broil until bacon is crisp.
Orangeade Cocktail
One fluffy beaten egg added to Lark orangeade concentrate diluted as for punch makes a tasty and nutritious fruit beverage for breakfast. Finely mashed banana may be used instead of egg.
Cinnamon Toast
Toast Weber bread until a beautiful brown butter and sprinkle with cinnamon. Return to for few seconds.
Plain Muffins: Sweet Temperature 350—Time minutes.
2 cups flour,
3 tsp. K.C. baking powder,
2 tbsp. sugar,
½ tsp. salt,
1 egg,
3 tbsp. melted Crisco.
Measure all dry ingredients sift together into mixin. Beat eggs in separate booamy, add milk and melt co.(Crisco should not hot, just melted). Turn ingredients into the dry at one time and immediately to combine the two by vigorously until well blended do not over-beat batter.
Plain Cake (Muffin Mixture)
Temperatures 350—Time:
1/3 cup Crisco,
2/3 cup milk,
½ tsp. vanilla,
2 med. sized eggs, beaten
1¼ cups cake flour,
2 tsp. K.C. baking powder
¼ tsp. salt,
1 cup sugar.

Rice Delight
½ lb. Wilson's small link sausage cut in small pieces,

1 cup celery (diced fine),

½ cup liquid,
1 tbsp. Worchestershire sauce,
1 cup dry rice.
Brown sausage in pan, then saute (brown) celery, onions and peppers (diced very fine). Add 2 cans chicken soup, 1 can mushrooms and ½ cup water. Bring to brisk boil. Then add 1 tbsp. Worchestershire sauce and 1 cup rice which has been well washed. Turn heat off and cook 20 minutes.
Easter Breakfast Suggestions
Hot Cross Buns
1 cup scalded milk,
¼ cup Crisco,
1/3 cup sugar,
½ tsp. salt,
1 compressed yeast cake,
1 tsp. sugar,
2 tbsp. luke-warm water,
1 beaten egg,
½ cup seedless raisins,
1 tsp. cinnamon,
¼ tsp. allspice,
3¾ cups flour.
Combine the first four ingredients and cool to lukewarm (85 degrees). Mix 1 tsp. sugar with 1 compressed-yeast cake that has been softened in 2 tbsp. luke-warm water, and add. Add remainder of ingredients. Place in a greased bowl, cover, and let rise in a warm place until double in bulk. Knead, shape into 2-inch balls, arrange in greased pan. Brush each bun with egg white; cover and let rise until double in bulk. Snip a deep

Cinnamon Toast
Toast Weber bread in broiler until a beautiful brown, remove, butter and sprinkle with sugar and cinnamon. Return to broiler for few seconds.

3 tsp. K. C. baking powder,
2 tbsp. sugar,
½ tsp. salt,
1 egg,
3 tbsp. melted Crisco.
Measure all dry ingredients and mix together into mixing bowl. Beat eggs in separate bowl until foamy, add milk and melted Crisco. (Crisco should not be too hot, just melted). Turn the wet ingredients into the dry ones all at one time and immediately start to combine the two by stirring vigorously until well blended, but do not over-beat batter.

1/3 cup Crisco,

½ tsp. vanilla,
2 med. sized eggs, beaten,
1¼ cups cake flour,
