TESTS OF SULPHURED FRUIT Showing that Cooked Food Contains Only Small Proportion of Sulphur Originally Applied in Drying The following letter to the editor of the Gazette, from Curtis & Tompkins, analytical chemists of San Francisco, concerning experiments made to determine the quantity of sulphur in fruit after cooking, will without doubt be perused with interest by our readers: SAN FRANCISCO, Aug. 26, 1907. Editor Gazette—Experiments conducted in our laboratory for the past few months with sulphured fruit, and one particularly in keeping with questions asked at a meeting of the growers and the packers before Secretary Wilson last Friday, have developed facts which we believe of sufficient interest to warrant distribution of the results to those concerned for whatever benefit they may derive from this work. A well known fact that cooked fruit contains a very small proportion of the sulphurous acid originally contained in the material, was the basis of an extended series of experiments under varying conditions, and with a large assortment of fruits, differing widely in the amount of sulphur concerned for whatever benefit they may derive from this work. In order to ascertain exactly what percentage remained in the edible product, the following work, briefly stated, consisted of soaking the fruit for different periods of time, and in one case, the water so used was drawn off and subjected to analysis; fresh water was then added, the fruit cooked and the sulphur dioxide determined therein. The result of these two determinations show but a small difference in the final result (sulphurous acid remaining in the cooked material) and hardly enough to be practically considered, though clearly in favor of cooking with fresh water after soaking. Owing to limited space and the lack of time to tabulate the entire work, four samples representing two each of this and last year's pack were selected to demonstrate the results. It is clearly seen from these results that a sample containing sulphurous acid considerably in excess of the present limit of 0.035 per cent is reduced to figures below the requirements when the fruit is ready for table consumption. It may be further stated that practically all the sulphurous acid so remaining is combined, and not in a free state. Cooking the well soaked fruit has developed the fact that less sulphurous acid is retained in the final product, than when the dried fruit is subjected to cooking without previous soaking, even though it be cooked to the same degree of softness. Throughout these experiments the fruit was cooked just to a point where it was fit for table consumption, and represented about twenty minutes for the fruit soaked over night, and about an hour for the fruit not soaked at all, with the others in like proportion. In no instance did the fruit lose its shape from excessive cooking. It must be remembered, however, that the results obtained are correct only in a general and practical manner. The amount of sulphur, the age and kind of fruit, the time and manner of cooking, etc., would alter the results to a certain degree. In as much as a very small fraction of 1 per cent of dried fruit is ever consumed in that state (without cooking), it would appear that a favorable consideration of these facts should be taken into account in fixing the limitation of sulphurous acid applicable to the dried fruit trade. A Punishment Still In Vogue In Many English Prisons. The treadwheel is still in vogue at many English prisons. Within the walls is a little building, built of blue gray stone, standing somewhat apart from the main structure in a corner of the exercise ground and prison garden. On the chocolate colored door are painted in white letters the two words, "Wheel House." As the door opens the dull, grinding sound that we heard outside grows a little louder and clearer. The door closes behind us with the inevitable clash and click of the returning bolt. The house is an apartment some thirty feet long and fifteen feet wide. On the left hand side are the wheels, four of them, in two tiers, divided by a gallery running the whole length of the house and communicating with the floor by a staircase at the opposite end. On the right hand side there is another lower and shorter gallery, on which stands the warder in charge! The wheels are separated by a section of brick wall. Each wheel is divided into compartments, cutting off each prisoner from the others. The object of this is to prevent the prisoners from seeing and hearing one another, although conversation in a low voice pitched in a different key from that of "the music of the wheel" is perfectly easy and intelligible.
