If you cook, you can coo with wine. It's as simple that. And the pleasures to gained from adventures in whi cookery are out of all proportions compared to the small fort involved.
So writes Emily Chase, author of the recently published cook book, "The Pleasures Cooking With Wine" (Prentice Hall, Inc., $4.95).
Miss Chase says: "No other ingredient in your kitchen will reward you with more experiences in good eating, for which rounds out the flavor of man-made dish to perfection."
The book is filled with recipes for many types of food, but the author has not attempted to make it an all-inclusive collection. Instead of "fancy cookery," she has specialized in usable, practical recipes, guaranteed to result in good eating. One of her favorites is French Pot Roast. Here it is:

The book is filled with recipes for many types of food, but the author has not attempted to make it an all-inclusive collection. Instead of "fancy cookery," she has specialized in usable, practical recipes, guaranteed to result in good eating. One of her favorites is French Pot Roast. Here it is:
FRENCH POT ROAST (Serves eight or more)
4 slices bacon, "diced" with scissors
4 to 5 pounds beef chuck, rolled and tied
1 (10½-oz.) can condensed consomme
1 cup dry red table wine
2 carrots, diced
1 large onion, diced
1 clove garlic, halved
6 whole allspice
8 whole peppercorns
1 bay leaf, crushed
Several sprigs parsley
Pinch of thyme
Salt and pepper to taste
Cook bacon slowly in Dutch oven or other heavy kettle for five minutes. Add meat and brown slowly and thoroughly on all sides. Add all maining ingredients. Bring a boil, then cover tightly a simmer very, very gently for three to four hours, or until meat is tender, turning me occasionally. Remove me from kettle and if it's too served in the near future, it where it will keep warm. Dinner is still a while away simply set the roast aside and reheat it gently in the grate before serving.
To make gravy: Strain broth and skim off as much of the fat as possible. Measure that cups broth, adding beef stock or water if necessary to make that amount; pour back into kettle and heat to boiling Blend one-third cup flour and one-half cup cold beef stock water until smooth; stir slowly into boiling broth; continue cooking and stirring until mixture is thickened and smooth then simmer five minutes longer. Add two tablespoons brandy (if you like) and salt and pepper to taste. Serve gravy plating hot with the roast.
