Anaheim Gazette—A5 Anaheim, Thursday, Jan. 12, 1961 Marble Cake Wins Top Prize A dramatic demonstration of the art of fine baking was given by Mrs. Marion Kerby of Cascade, Idaho, whose Chocolate Orange Marble Cake won top honors in her 6-state Grange Region comprising Washington, Oregon, California, Idaho, Montana and Colorado. Here, for you to try, is Mrs. Kerby's prize recipe for: Chocolate Orange Marble Cake 3½ cups sifted all-purpose flour 1½ teaspoon salt 2 cups sugar 1½ cup butter 1½ cup shortening 2 tablespoons boiling water Measure sifted flour, add salt, and sift together. Cream sugar, butter, and shortening until fuffy. Add boiling water and vanilla. Here, for you to try, is Mrs. Kerby's prize recipe for: Chocolate Orange Marble Cake 3½ cups sifted all-purpose flour 1½ teaspoon salt 2 cups sugar 1¼ cup butter 1½ cup shortening 2 tablespoons boiling water Measure sifted flour, add salt, and sift together. Cream sugar, butter, and shortening until fluffy. Add boiling water and vanilla. Beat 1 minute at medium speed of mixer. Alternately add flour and cold water, beating after each addition until smooth. Sift baking powder over batter. Fold in with the egg whites. Divide batter and fold chocolate into one half. Alternately spoon chocolate and vanilla batters into three round 8-inch layer pans which have been lined on bottoms with paper. Pull a knife through batten to marble. Bake in a moderate oven (350°F.) about 30 minutes. Cool. Spread Orange Filling between layers and Chocolate Frosting over top and sides of cake. Orange Filling: Combine ¾ cup orange juice, ¾ cup sugar, 2 to 3 tablespoons grated orange rind, 2 tablespoons lemon juice, 2 tablespoons cornstarch, and ½ teaspoon salt in saucepan. Cook and stir over medium heat until mixture thickens and comes to a boil. Slowly stir about half of the mixture into 4 slightly beaten egg yolks. Return to saucepan and cook 1 minute, stirring constantly. Remove from heat and stir in 2 tablespoons butter. Cool. Makes 1½ cups. Chocolate Frosting: Combine ½ cup heavy cream, 2 squares unsweetened chocolate, 1 tablespoon lemon juice, and ¼ teaspoon salt in a saucepan. Cook and stir over medium heat until chocolate is melted. Remove from heat and stir in 1 teaspoon vanilla. Then add 3 to 3½ cups sifted confectioners' sugar, beating until frosting is of spreading consistency. Spread over top and sides of cake. Makes about 3 cups. Chamber to Honor Developer Owen Ground breaking ceremonies for the construction of two buildings on the southwest corner of S. Claudina St. and E. Ball Rd. are scheduled for 11 a.m. next Wednesday. Industrial Developer Leroy D.
