SA Music Department Features Thanksgiving Vesper Services Reservations Now For Dance Show On SAC Campus Santa Ana College students will sponsor a Flamenco dance program on Tuesday, Nov. 29, featuring Martin Vargas and Maria Rose, two of the world's leading dancers. Assisting artists will be Manola Leiva, Flamenco singer from Spain, and Adonis Puertas, solo guitarist. Vargas was a headliner at SAC last spring with the Spanish American Ballet. Both he and Miss Rosa have toured in many countries. Reservations for the program in Phillips Hall can be made through the SAC ticket office. Reading of the Thanksgiving Proclamation with choral accompaniment will feature the Vesper Program of the Santa Ana College Music Department on Sunday, Nov. 20, at 3:30 p.m. in Phillips Hall, marking the first such inspirational program at SAC in several years. The hour-long program will have a Thanksgiving patriotic theme, with participating in including members of the 40-voice College Choir and instrumental ensembles. The program will serve as a concluding event of traditional Homecoming weekend at SAC. The Thanksgiving proclamation will be read by Robert Roark, recalling how it was written and delivered by Wilbur Lucius Cross to the Connecticut Legislature just before he left Hartford upon the occasion of his defeat for re-election in 1938. The proclamation has come to be regarded as an American classic and the vocal accompaniment will be combined with the traditional harvest hymn. Other program numbers will include "America," "Jesu, Priceless Treasure," "In Thine Arms" and "Hence All Fear," all by Bach, by the choir; instrumental interludes; "Around the Country." Add 1/3 cup sugar, 1/4 cup water, and the egg yolk. Blend. Then add 1-3/4 cups water. Cook over medium heat, stirring constantly until mixture comes to a full boil. Remove from heat. Beat the egg white until foamy; gradually add 2 tablespoons sugar and beat until soft peaks form. Fold in hot filling. Cover and chill. Crumble shell mix into a small bowl. Add 2/3 cup boiling water. Beat with spoon until completely blended. Then add eggs, one at a time, beating thoroughly after each addition until dough is very thick and elastic. Spoon dough into filling mix bag (Bag 1), a little at a time, pushing dough into bottom of bag. Fold down top of bag tightly in narrow folds until it meets dough. Cut off corner of bag as indicated. Hold bag as illustrated on package. Squeeze dough with steady, even pressure onto an ungreased baking sheet in 6 to 8 strips, about 4 inches long and 1 inch wide. To finish each eclair, ease pressure; lift bag. With a spatula, straighten sides and round ends if necessary. Bake in a hot oven (425°F.) for 30 to 35 minutes. Cool. Cut off tops of shells with a sharp knife. Beat chilled filling until creamy, then beat whipping cream until soft peaks form; fold into filling. Spoon into shells. Replace tops. Empty vanilla topping mix into a small saucepan. Add 2 tablespoons water. Place over low heat and stir constantly just until topping is smooth and glossy, about 1 minute. Remove from heat. Cool, stirring constantly, until thick enough to spread just on top. Makes 6 to 8 eclairs. Fresh mushrooms, grated carrots, apples, raisins, nutmeats, chestnuts and oysters are a few of the items that are often added to the traditional celery dressing. A tossed green, crisp cabbage slaw or fresh vegetables molded in lemon or lime make delightful salads for your Thanksgiving meals. TURKEY DRESSING 4 cups finely diced celery 2 cups boiling water ½ cup inced onion ½ cup butter or margarine 1 cup grated carrot ½ cup raisins 2 tsp. poultry seasoning 1 tablespoon salt 1 tsp. pepper 4 quarts dry bread cubes Simmer celery, covered in boiling water, 15-20 minutes or until tender. Drain, reserving 1 cup liquid. Saute onions in butter. Combine all ingredients. Use for stuffing a 10-pound bird. Douglas Vester Douglas Allen Vester, son of Mr. and Mrs. Charles E. Vester, Anaheim, claims the hold of being the first man to enter in the U.S. Coast Guard out the new Orange County state.
