Twenty-nine Major Fiestas Launched for August
With Spotlight on Gala California State Fair
Twenty-nine major fairs will be launched during August in California, headed by the glamorous California State Fair and Exposition at Sacramento, and including three others with pari mutuel race programs, according to Western Fairs Association.
The big one—in Sacramento—will get off to a ringing start on the morning of Aug. 31, when Governor Edmund G. Brown signals the opening of gates, and unvells the "Maid of California" from a final field of 11 beauties, chosen from all over California. The fair is scheduled through Sept. 11, and will include a race meet. Some 900,000 persons are expected to keep turnstiles clicking over the 12-day period.
Also with racing will be the San Mateo County Fair, San Mateo, Aug. 5-13; Humboldt County Fair, Ferndale, Aug. 15-20, and San Joaquin County Fair, Stockton, Aug. 18-27.

The tangy lemon and the crunchy graham cracker were meant for each other. And a delicate cake, which includes graham crackers and nuts in the batter and is frosted with a new fluffy lemon frosting, is simple to make on a summer day.
A frosting mix quickly whips into a delicate, airy, pale yellow fluff which spreads easily for a professional decorating look. Your torta is lovely to look at and delightful to eat.
Lemon Graham Torte
8 egg, separated 1 cup milk
1 cup brown sugar (packed) ½ cup butter
¼ cup sifted enriched flour 1 tsp. vanilla
8 tsp. baking powder ½ cup finely chopped nuts
¼ tsp. salt 1 pkg. Lemon Fluff Frosting
2 cups finely crushed graham crackers (about 24)
Heat oven to 850° (mod.). Grease and flour two 8 or 9" round layer pans. Beat egg whites in small mixer bowl until frothy. Gradually beat in half of the brown sugar and continue beating until very firm. Set aside. Sift flour, baking powder and salt together into large mixer bowl. Stir graham cracker crumbs and remaining brown sugar into flour mixture. Add half of milk, butter and vanilla. Blend ingredients well. Beat 1 min., med. speed on mixer or 150 strokes by hand. Scrape sides and bottom of bowl constantly. Batter will be very thick. Add rest of milk and egg yolks. Blend well and beat 1 min., more, scraping sides of bowl often. Fold in nuts and meringue. Pour into prepared pans. Bake 30 to 40 min., until toothpick stuck into center of cake comes out clean and cake begins to leave sides of pans. Cool 10 min., before removing from pan. Handle cake gently as it is delicate and tender.
When completely cool, split each layer in half. Prepare frosting mix as directed on pkg. Spread between layers and on top of cake. Sprinkle top and sides of cake with graham cracker crumbs. The cracker crumbs will stick to frosting and make an attractive garnish.
