6 • Anaheim Gazette Anaheim, Calif., Thurs., Mar. 20, 1958 Lamb Frisk 3 slices bacon 2 pounds neck or shoulder lamb, cut in 1-inch cubes 2 medium onions sliced 2 cups water (or 1 cup wine and 1 c. water) 3 medium potatoes, diced 1 c. canned tomatoes 1 tbsp. Worcestershire sauce 1 tbsp. chopped parsley 2 tsps, salt ½ tsp. each, thyme, curry powder, and black pepper Pan-fry bacon until crisp; remove bacon and drain on absorbent paper. Brown lamb in hot fat; push meat to side of pan and brown sliced onions; remove onions from skillet. Add water or water and wine, cover and cook over low heat until lamb is fork tender about 1½ hours. Then add onions and remaining ingredients and cook, covered, until potatoes are tender, about 20 minutes. Thicken drippings. Crumble bacon and add. 6 servings. Saturday Night Salad Crumble 4 slices crisp-cooked bacon. Cut 3 tender green onions in ¼-inch lengths. Rub salad bowl with cut clove garlic and fill with broken leaves of chilled Bilb or leaf lettuce, curly endive and ½ c. diced anise bulb (finnochlo) or celery. Add onions (or nipped chives), bacon, 1 tsp. mixed salad herbs, 2 tbsps. chopped fresh parsley, and 2 tbsps. olive oil. Mix until greens are well-coated with oil, then add freshly ground pepper, ½ tsp. salt and ¼ cup wine, vinegar. Mix until well blended and serve immediately. Makes 6 servings. Quick Pizza 1 can corned beef hash ½ c. catsup ½ tsp. oregano 1 tsp. chopped parsley 2 tbsps. finely chopped onion 8 slices enriched bread, thin-sliced 1 package (8 ozs.) sliced process Cheddar cheese Mix hash with catsup, oregano, parsley and onion. Trim crusts from bread and toast one side. Spread ½ meat mixture on each bread slice, completely covering bread slice. Top each with slice of cheese. Arrange on broiler rack 5 in. below heat source, and broil 5 minutes, or until cheese is bubbly and pizzas are piping hot. 4 servings. Some New Zealand farmers hunt whales as a side line.
