Anakelm Gazette Anakelm, Calif., Thurs., Oct. 17, 1957 ELLIED MEAT LOA 1 envelope unflavored gelatin ½ C. cold water 1½ C. hot bouillon, consomme or meat stock 2 tbsps. lemon juice 1 tsp. salt ½ tsp. onion juice 1 hard-cooked egg, sliced 2 C. ground cooked beef roast 1 large stalk celery, ground 2 tbsp. diced pimiento ¼ C. sweet pickle relish Soften gelatin in water, add bouillon, and stir until dissolved. Add lemon juice, salt, and onion juice. Cool until mixture starts to thicken. Lightly oil a one quart ring mold, 6 custard cups, or a small loaf pan. Spoon a thin layer of gelatin mixture into bottom of the mold. Arrange egg slices in gelatin layer; chill. Mix remaining gelatin mixture with ground meat, celery, pickle relish, and pimiento; gently spoon over egg slices. Chill in refrigerator until firm. 6 servings. VEAL CHOPS SPECIAL 4 veal chops, 1 inch thick ½ C. dry red or sherry wine 1 tsp. salt ½ tsp. marjoram 2 tbspa. lard 1 5-ounce can water chestnuts 2 tbsps. mushrooms 1 3-ounce can sliced mushrooms Marinate chops in wine, salt and marjoram at least 1 hour. Drain well, reserving marinade. Brown chops in hot fat and add marinade. Cover and simmer over low heat 1 tsp. salt ½ tsp. marjoram 2 tbsps. lard 1 5-ounce can water chestnuts 2 tbsps. mushrooms 1 3-ounce can sliced mushrooms Marinate chops in wine, salt and marjoram at least 1 hour. Drain well, reserving marinade. Brown chops in hot fat and add marinade. Cover and simmer over low heat until chops are tender, 30 to 45 minutes. Drain nuts, reserving liquid and cut in slices ½ inch thick. Combine cornstarch with liquid—and contents of can of mushrooms, mix until smooth. Add mixture and nuts to meat, and continue cooking, stirring constantly, until sauce thickens. Serve over buttered rice, if you like. 4 servings. RAISIN-MOLASSES COOKIES ½ C. lard ½ C. sugar 1 egg ½ C. molasses 2 C. flour 1 tsp. soda 1 tsp. cinnamon ¼ tsp. ginger ½ tsp. cloves ½ tsp. salt ¼ C. strong coffee 1 C. seedless raisins Cream lard, sugar and egg together until light and fluffy. Stir in molasses. Sift flour, soda, cinnamon, ginger, cloves and salt and mix into lard mixture alternately with coffee. Stir in raisins. Drop by teaspoonfuls onto a greased cookie sheet. Bake at 375°F 15 to 20 minutes. 4 dozen. MEAT BALL SKILLET 1½ lbs. ground beef 1 small onion, chopped ¼ C. bread crumbs 1 tsp. dry mustard ¼ tsp. chilli powder ½ C. milk 1 egg, slightly beaten Salt 2 tbsps. lard or drippings 1¼ C. tomato juice 1 tsp. Worcestershire sauce 6 small potatoes 2 medium onions, sliced 2 stalks celery, sliced Mix ground beef with chopped onion, crumbs, mustard, chili. LIBBY'S TOMATO JUICE 3 46-OZ. Worcestershire sauce 6 small potatoes 2 medium onions, sliced 2 stalks celery, sliced Mix ground beef with chopped onion, crumbs, mustard, chili powder, milk, egg, and 1½ tps. salt; shape into medium-sized balls. Brown in hot fat. Add tomato juice, Worcestershire sauce, vegetables and 1 teaspoon salt; cover pan and simmer 20 to 30 minutes, or until potatoes are tender. 6 servings. HEALTH FRUIT SALAD 2 C. water 1 C. uncooked white rice 2 teaspoons salt ½ C. French dressing 2 oranges, sectioned 1 grapefruit, sectioned 1 tbsp. lemon or lime juice 1 ripe avocado Salad greens METHOD: Put water, rice and salt in 2-quart saucepan. Bring to vigorous boil over high heat. Turn heat low as possible. Cover with lid and leave over low heat 14 minutes. Remove saucepan from heat but leave lid on 10 minutes. Stir French dressing into rice. Cool. Cover and store in refrigerator until time to serve. Just before serving, cut avocado in half. Remove seed and skin. Cut into long thin slices. Pour lemon or lime juices over avocado slices. To serve, mound rice mixture on salad greens. Arrange avocado slices, orange and grapefruit slices over mound of rice. This recipe makes 8 servings.
