8 - Anaheim Gazette Anshelm, Calif., Thurs., Sept. 6, 1957 TEACHER AT CONFERENCE Gertrude Powell of the local Teachers Association was among the 360 chapters of the California Teachers Association attending the three-day conference held in Asilomar this week. The conference, designed to train local presidents, featured meetings on 35 different subjects with which each local president should be conversant. Special emphasis was put on the professional duties of teachers, including maintenance of high standards, improvement in teacher methods and self-discipline in the profession. HOMEMADE CRANBERRY ORANGE ICE CREAM (Makes about 2½ quarts) 1¼ C. whole cranberry sauce (one 1-pound can) 1½ C. (7½ to 8-ounce jar) marshmallow whip 1½ C. (large can) undiluted evaporated milk ¼ C. lemon juice 2 tbsp. grated orange rind Combine cranberry sauce and marshmallow whip. Allow to stand 25 minutes. Stir occasionally until bell blended. Chill evaporated milk in refrigerator tray until soft ice crystals form around edges of tray (about 25 to 30 minutes). Whip evaporated milk until stiff (about 2 minutes). Add lemon juice. Whip very stiff (about 2 minutes longer). Fold cranberry sauce mixture and orange rind into whipped evaporated milk. Spoon into refrigerator trays. Freeze until firm (about 3 hours). COCONUT MERINGUE SQUARES 1 package lemon flake cake COCONUT MERINGUE SQUARES 1 package lemon flake cake mix 1 cup water 2 unbeaten eggs 3 egg whites ½ cup sugar 1 cup coconut Prepare cake mix with water and eggs as directed on package. Pour batter into 13x9-inch pan, which has been greased and floured on bottom. Bake in moderate oven (350°) 30 to 35 minutes. Beat egg whites until foamy throughout. Add sugar, 2 tablespoons at a time, beating after each addition until sugar is blended. Then continue beating until meringue will stand in stiff peaks. Spread at once on hot cake in pan and sprinkle with coconut. Return cake to moderate oven (350°F.) and bake about 12 minutes longer, or until coconut is golden brown. Leave in pan. Cover with foil punched here and there with holes to allow cooling on way to picnic. Cut in squares to serve. Makes 24 squares. CHICKEN SALAD 2 c. cooked chicken, cut in large chunks 1 can (1 lb.) peas ½ c. ripe pitted olives, sliced ½ c. celery, diced 1 tbsp. lemon juice 3 hard cooked eggs, cut in chunks ½ c. sweet pickles, chopped ½ c. broken pecans ¼ tsp. pepper 1 tsp. salt ½ c. mayonnaise Combine all ingredients and toss together lightly.
