2/3 cup packaged pre-cooked rice
½ teaspoon salt
¾ cup boiling water
¼ cup mayonnaise
1 tablespoon lemon juice
Dash of pepper
1 teaspoon onion juice
2 tablespoons chopped dill pickle
½ cup diced celery
1 can (4 ounces) sardines, drained and cut in large pieces

1 hard-cooked egg
Add packaged pre-cooked rice and salt to boiling water in saucepan. Mix just to molten all rice. Cover and remove from heat. Let stand 13 minutes. Then uncover and let cool to room temperature.
About 1 hour before serving combine mayonnaise, lemon juice, pepper, onion juice, dill pickle, and celery, mixing well. Add cooled rice, mixing lightly. Then add sardines and mix lightly. Chill.
To serve, cut each tomato to form 5 petals, making cuts about 2/3 through tomato, spread open, and sprinkle with salt and pep-
per. Place sardine and rice mixture in center of tomato. Serve on crisp lettuce. Garnish with a wedge of hard-cooked egg. Makes 5 servings.
FROZEN LOBSTER SALAD
½ lb. cooked lobster meat
1 pkg. (3 ounces) cream cheese
½ C. mayonnaise or salar, dressing
2 tbsp. pimiento, chopped
½ C. chopped nuts
1 tsp. salt
5 drops Tabasco
½ C. whipping cream
Lettuce
Cut lobster meat into ½-inch pieces. Cream cheese and mayonnaise.

Cream cheese and mayonnaise. Add next four ingredients and lobster meat. Whip and
fold in cream. Place in 1-quart
ice cube tray; freeze. Remove
from frezer and let stand at
room temperature for 15 minutes
before serving. Cut into 6 slices
and serve on lettuce. Serves 6.
PINEAPPLE-LIME COOLER
(Low Carolle)
1¼ cups unsweetened pineapple
juice
¼ cup fresh lime juice
¼ cup lemon juice
2 tablespoons Sucafyl solution
or 48 tablets, crushed
1 pint no-calorie ginger-sle
drink
Combine all ingredients except
ginger-ale; chill. Just before
serving, add ginger-ale. Pour over
crushed ice or ice cubes in tall
glasses. Garnish with fresh fruits,
if desired.
