COOKING FRANKS
Cooking methods for franks or welpers are almost as numerous as their names; franks also can be served as they come from the market — they're fully cooked when sold.
To pan-fry, slice the hot dogs in half lengthwise and brown in a little hot fat. (They cook more quickly when halved.) To cook-in-water, place meat in a pan of boiling water to cover. Remove the pan from the heat and cover with a tight-fitting lid. Let stand 5 to 8 minutes and then serve.
To broil or grill, place franks about 3 inches from the source of heat and brown lightly. Bake them for about 15 minutes in a 450°F. oven if you like.
BARBECUED FRANKS
1 medium onion, minced
2 tablespoons butter or margarine
1 cup water
¼ cup catsup
1 tablespoon brown sugar
1 tablespoon Worcestershire sauce
½ teaspoon chili powder
½ teaspoon salt
1 dash hot pepper sauce
1 pound frankfurters
Cook onions in hot butter until soft. Add water, catsup and seasoning. Simmer over low heat 10 minutes. Add frankfurters and cook over low heat 5 to 8 minutes. 6 servings.
CURRIED APPENZIE
Pastry Shells:
2 bars (1 cup) margarine
2 3-ounce packages creme cheese
2 cups sifted enriched flour
Let margarine and cheese soften in mixing bowl tempegature about one hour. Work with wooden spoon smooth and creamy. Add fourths, blending thoroughly each addition. Refrish dough about 30 minutes. Off small pieces of dough shape into 1-inch balls. Put ball of dough in cup of (1¼-inch) muffin pans. dough against bottom and lining each cup evenly dough. Bake at 425 degrees 12 minutes or until past golden. Let stand five minutes lift out of pan. Cool on wire.
Curried Filling:
1 tablespoon margarine
2 tablespoons chopped onions
2 tablespoons curry powder
1 teaspoon flour
¼ cup light cream or milk
¼ teaspoon garlic salt
½ teaspoon pepper
1 tablespoon lemon juice
1 cup canned crabmeat, shrimp, lobster or tuna

CURRIED APPETIZERS
Burry Shells:
2 bars (1 cup) margarine
2 3-ounce packages cream cheese
2 cups sifted enriched flour
Let margarine and cream cheese soften in mixing bowl at room temperature about one hour. Work with wooden spoon until smooth and creamy. Add flour in urths, blending thoroughly after each addition. Refrigerate dough about 30 minutes. Pinch of small pieces of dough at edge into 1-inch balls. Put each ball of dough in cup of small ¼-inch muffin pans. Press dough against bottom and sides,ing each cup evenly with dough. Bake at 425 degrees 10 to minutes or until pastry is golden. Let stand five minutes; out of pan. Cool on wire rack.
Curried Filling:

Melt margarine in a large skillet. Add onion and sauce until thick. Add curry powder and stir to blend. Gradually in cream. Cook until thick, stirring constantly. Add ricic盐, pepper, lemon juice, seafood. Keep hot over simmering water. Spoon into shells serve as snack accompaniment for ale or beer. Makes about 8 cups.
SAUSAGE ROLLS
½ cup diced salami
1 small onion, finely chopped
1 tablespoon prepared mustard
8 slices bologna
2 tablespoons fat
Combine salami, onion, and mustard. Spoon into centers of sliced bologna. Roll each filled bologna slice and fasten with cocktail picks. Cook bologna rolls in hot fat until browned. Serve immediately. 4 servings.
CANNED MEAT AND POTATOES
1 N.J. 2½ can sweet potatoes
⅔ cup brown sugar
2 tbsp. dark corn syrup
1 tablespoon grated orange rind
1 tablespoon butter or margarine
1 can luncheon meat
1 tablespoon fat or drippings
Drain liquid from potatoes. Mix ½ cup liquid with brown sugar, corn syrup, orange rind and butter. (Save remaining liquid for use in vegetable sauces or easteroles). Simmer 5 minutes and add potatoes. Cook over low heat 15 minutes. Meanwhile, cut luncheon meat into 8 slices and brown in hot fat. Serve meat and potatoes on a platter with the accompanying sauce. 4 servings.
CRISP COCONUT COOKIES
1½ cups sifted flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ cup butter or margarine
½ cup granulated sugar
½ cup brown sugar
CRUNCHY ICE CREAM BALLS
1 cup cereal crumbs
¼ cup shredded coconut
¼ cup chopped nutmeats
1 quart ice cream
Mix together oreal crumbs, coconut, and nutmeats. Shape ice cream into balls and roll quickly to coat in the crumb mixture. Place in freezer compartment until rehardened. Do not hold over two hours. Serve with any favorite sundae sauce, or a variety of sauces.
Butterscotch Sauce:
1/3 cup butter or margarine
1 cup brown sugar
½ cup light cream
Combine butter and sugar and cook over low heat, stir occasionally, until sugar is melted and mixture comes to the point. Add ¼ cup light and cook one minute, constantly. Stir in another light cream; cook one longer. Serve warm or cold.
STUFFED FRANKENSTEIN
Stuffed franks often are ed or baked. To prepare them dogs, split them almost way through lengthwise and them with one of the foils before cooking:

Sift together flour, baking powder, soda and salt. Blend butter
and sugars. Add egg and vanilla;
beat well. Add sifted dry ingredients, mixing thoroughly. Stir in
coconut and Special K. Drop by
teaspoonfuls onto greased baking
sheets. Bake in moderate oven
(350°F.) about 10 minutes.

Stuffed franks often are grilled or baked. To prepare these hot dogs, split them almost all the way through lengthwise and stuff them with one of the following before cooking:
1. Applesauce and wrap with a strip of bacon.
CURRANT - GLAZED MEAT LOAF
1 pound ground fresh pork
1 pound ground veal
1 cup grated raw potato
½ cup grated process cheese
1 small onion, grated
1 egg
1½ teaspoon salt
1 teaspoon Worcestershire sauce
½ teaspoon thyme
½ teaspoon pepper Glaze:
½ cup currant jelly
1 tablespoon hot water
1 teaspoon prepared mustard
Make meat loaf: Combine all ingredients in large bowl; mix lightly with fork; spoon into load pan, 9x5x3; invert into shallow pan; carefully remove loaf pan.
Make glaze: Melt jelly in hot water; add mustard; spread over top of loaf. Bake in moderate oven (350°) 1 hour, or until meat is well done and top is a rich golden brown.
Makes-6 servings.
