Two-Way Spice Cake 2¼ cups sifted enriched flour* 2¼ teaspoons baking powder ½ teaspoon soda ½ teaspoon salt ½ teaspoon nutmeg ½ teaspoon ground cloves 1¼ teaspoons cinnamon ½ cup shortening 1¼ cups brown sugar 2 eggs, beaten 1 teaspoon vanilla extract 1 cup mashed ripe bananas or canned applesauce 2½ tablespoons milk Sift together flour, baking powder, soda, salt, and spices. Cream together shortening and sugar until light and fluffy. Stir in eggs and vanilla extract. Beat well. Stir flour mixture into creamed mixture alternately with bananas or applesauce and milk. Pour into greased 7x11-inch pan. Bake in moderate oven (350°) about 40 minutes. While still hot, spread with Broiler Frosting (recipe below) and broil 3 inches from heat about 1 minute, or until bubbly. Watch carefully so frosting doesn't burn. Makes one 7x11-inch cake. *If self-rising flour is used, omit baking powder and salt. Broiler Frosting ½ cup brown sugar ½ cup granulated sugar 1½ tablespoons milk 2 tablespoons melted butter or margarine ½ cup chopped walnuts or almonds Blend sugars. Stir in milk and butter or margarine. Fold in nuts. Spread on cake. The total weight of paper currency manufactured by the United States in 1945 was 1,514 tons. BUS.
