BEEF STEOGANOFF
WITH NOODLES
(For large groups)
6 pounds beef chuck, ½-inch thick
¼ cup butter or margarine
4 onions, thinly sliced
1 12-¾ ounce can mushrooms
¼ cup water
1 tablespoon salt
Pepper to taste
Nutmeg to taste
1 quart sour cream
¼ cup salt
3 gallons boiling water
2 pounds wide egg noodles
1. Flatten beef with mallet; cut into strips 1-inch wide, 2 inches long. Melt butter or margarine over medium heat. Add beef strips and onions and saute until browned.
2. Add undrained mushrooms, ¼ cup water, 1 tablespoon salt, pepper and nutmeg; cover and cook 30 minutes, or until beef is tender.
3. Gradually stir in sour cream and heat to serving temperature over low heat.
4. Meanwhile, add ¼ cup salt to 3 gallons rapidly boiling water. Gradually add noodles so that water continues to boil. Cook uncovered, stirring occasionally, until tender. Drain in colander. Serve beef mixture over noodles. Makes 25 servings.

1 cup uncooked white rice
2 tablespoons cooking fat
1 large sweet onion, sliced

1 cup uncooked white rice
2 tablespoons cooking fat
1 large sweet onion, sliced
½ teaspoon oregano
6 large tomato slices, peeled
1 lb. fresh or frozen fish fillets, partially thawed
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon paprika
1 tablespoon lemon juice
1, 8 oz. can tomato sauce
8 thin slices (about ½ lb.) processed American cheese
Put the water, 1 teaspoon salt and rice in 2-quart saucepan. Bring to a vigorous boil. Turn the heat as low as possible. Cover the saucepan and simmer over this low heat 14 minutes. Remove the saucepan from the heat but leave the lid on 10 minutes. While the rice cooks, melt the fat in a skillet. Cook onion slices until soft but not brown. Arrange over the bottom of a greased shallow baking-serving dish about 10"x6" x2". Spread the rice over the onions. Sprinkle with oregano. Top with tomato slices. Separate the fish into serving pieces. Arrange over the tomatoes. Sprinkle the fish with the ½ teaspoon salt, black pepper, paprika, and lemon juice. Pour the tomato sauce over the fish. Cover the top with cheese slices. Place in a pre-heated 350°F oven and bake about 30 minutes or until the cheese bubbles and browns. This recipe makes 6 servings.
