Serve as a relish with roast beef or other meat. Makes about 20 medium glasses. PEPPER RELISH 1 cup prepared peppers ¾ cup apple vinegar 3½ cups beet sugar ½ bottle fruit pectin To prepare the peppers, cut open about one-half dozen large-sized peppers and discard seeds. (For best color, use 3 green peppers and 3 sweet red peppers.) Put through food chopper twice, using finest blade. Drain, reserving the juice. Use pulp for making relish; use juice for making jelly. GOLDEN BEEF STEW 1½ pounds beef stew meat ¼ cup flour 2 tablespoons lard 2½ cups hot water 2 tablespoons chopped oats ½ clove garlic 2 teaspoons salt ¼ teaspoon pepper ¼ teaspoon paprika ¼ teaspoon allspice 1 teaspoon sugar ½ teaspoon lemon juice ½ teaspoon Worcestershire sauce ¼ cup tomato juice 1 cup pearl onions ½ cup sliced carrots 1 cup cubed potatoes ½ cup diced celery Flour meat and brown fat. Add water, chopped garlic, salt, pepper, lemon Worcestershire sauce, and to juice. Cover and cook over heat 2 hours. Add vegetables cook 15 to 20 minutes long until meat and vegetables tender. 6 servings.
