Three Cheers For Cherries! Choose ripe red cherries for a well-dressed jelly shelf this summer and you'll find that their sparkling color will wear well in winter, tool now, while cherries are ripe, it's time to save their fine flavor in a jam that has eye and appetite appeal throughout the year. Linger only a few minutes in the kitchen to make this Cherry Jam, for it's a quick and easy short-boil recipe made possible with the addition of natural fruit pectin. And you'll discover that this short-boil method retains not only the fresh cherry flavor but provides a greater yield too, for practically none of the fruit juice is boiled away. Cherry Jam (Using sour cherries) Yield: about 11 medium glasses (5-1/2 lbs. jam) 4 cups prepared fruit 7 cups (3 lbs.) sugar (about 3 lbs. ripe sour cherries) 1 bottle Certo fruit pectin First, prepare the fruit. Stem and pit about 3 pounds fully ripe sour cherries. Chop fine. Measure 4 cups into a very large saucepan. Then make the jam. Add sugar to fruit in saucepan and mix well. Place over high heat, bring to a full rolling boil, and boil hard 1 minute, stirring constantly. Remove from heat and at once stir in Certo. Skim off foam with metal spoon. Then stir and skim by turns for 5 minutes to cool slightly, to prevent floating fruit. Ladle quickly into glasses. Cover jam at once with 1/8 inch hot paraffin. Note: For a stronger cherry flavor, add a few crushed cherry pits during simmering, or add 1/4 teaspoon almond extract before ladling jam. FALL BLOOMING ANNUAL'S HERITAGE Soon we'll be enjoying the warm colors of Fall-blooming Annuals ... glad that they lengthen out the blooming season and delay the arrival of the less colorful winter garden. A favorite in the Fall Annual class is the Zinnia. A hot-wetterer Annual the Zinnia blooms even color but blue ... and its habit of growth varies from upright to sprawling. Of the Zinnia elegance variety many horticultural varieties have been developed: Giant of California, Giant Dahlia Flowered, Cactus Flowered. These grow flowers five to six inches across on strong branching three foot plants. Dwarf forms of the Zinnia grow from five inches to one and a half feet high. Some of the name varieties are Baby, Lilliput, To Thumb. Recent additions to the Zinnia family are Golden Century broad petaled in orange and gladiolate Scarlet, twisted petal fiery scarlet flowers; Tangerine a come-and-cut-again Zinnia, Redish orange. Hybridizing of flower has resulted in a wide variety of colors and blossom forms and several horticultural varieties too. The regular single Petunia blooms in soft pink velvety-red, silvery-blue to pure and cream to pure white. Horticultural varieties include Nana pacta, dwarf size, excellent pots; Nana erecta, a good bed plant; Grandiflora, smooth edged deeply lobed flowers; Grifflora superbissima, veined marked, ruffled and fluted ers; Doubles, double-flutedation-like, very choice.
