For real success see that your menu reads something like this—barbecued hamburgers on buns, a tossed salad, and baskets of doughnuts served with hot chocolate, hot mulled cider or with coffee. For the barbecue treat, have beef chuck, or beef cubes ground. Allow ¼ pound of meat per person. According to Reba Staggs, meat expert, each pound of ground beef should be seasoned with 1 teaspoon salt and ½ teaspoon of pepper. When seasoned, shape the meat into patties. It's best to arrange on waxed paper. Slip them into your refrigerator and they will be ready to cook as soon as you're home from the game. To prepare a double-quick barbecue sauce do this. Saute ½ cup of minced onion in ¼ cup of lard or bacon drippings. Add 1½ cups of chilli sauce and ½ cup bottled meat sauce. When home from the game, brown the beef patties on both sides in a heavy frying pan, then spoon on the barbecue sauce; cover and simmer slowly until done. Give your buns a new twist, too. Soften butter or margarine and mix with ½ teaspoon each of garlic salt and onion salt. Spread on the buns just before serving. ORANGE BRAN MUFFINS Southern Californians love recipes which utilize the orange. The following recipe makes delicious muffins whoch are especially nutritious because of the bran and whole wheat flour.
