Lists Dangers of Oven Canning
Canning food in the oven of the kitchen range may cause an explosion that will wreck the stove, the kitchen, and cause serious injuries and burns to people in the kitchen, says Marian Prentiss, home advisor of Orange county.
Processing zneat or low-acid vegetables in an over brings another risk, warns Marian Prentiss. These foods must be processed at temperatures above the boiling point to be sure of killing bacteria that cause dangerous spoilage. Even though the oven temperatures may go to 240 degrees F. or higher, food inside a jar stays at the boiling point of water—212 degrees F. So oven-canned meats or low-acid vegetables may be poisonous.
The best way to can fruits and tomatoes is in a water bath canner. The only safe way to get the high temperature needed for processing vegetables or meats is to use a steam pressure canner.

Education Dept. TV Proposal Hits Financial Snag
SACRAMENTO. (CNS)—Plans for the state department of education headed by Dr. Roy E. Simpson to establish a series of television stations sponsored in seven regions of California hit a snag here today.
William J. Burkhard, superintendent of the Sacramento city school system, said the Sacramento district is financially unable to build or operate an educational television station, or take part in a group operation.
Simpson has called a meeting Aug. 28 of superintendents in seven areas in which educational television channels have been allotted by the federal communications commission. Burkhard said he wanted the city board of education's guidance in attending the meeting.
The city superintendent was advised by the board that it feels the state department of education should take the lead in the No hit or miss affair, Dollar Days is a big event in Anaheim, sponsored by the Retail Division of the Chamber of Commerce. Chairman Walter Swanberger explains it this way:
"With over one hundred new families moving into Anaheim per month, Dollar Days are planned to acquaint newcomers with the advantages of shopping in Anaheim. We hope that the tremendous dollar values will bring them to our shopping center.
"Shoppers will find that there are a minimum of shopping hazards in getting to the business district. There are ample free parking lots. Within an area of a few blocks, there is a complete assortment of merchandise to meet every need and it is sold without city sales tax. The sales people are anxious to serve and adjustments can easily be made when necessary. Money spent in the home town promotes the growth of the whole community."
Cash In
Chances are that you know the advantages of shopping in our city. You know, Mrs. Homemaker,
program, through its audio-visual program, and that any help the city could give would be "token" assistance.
It was pointed out here today that the television station costs, if unable to be afforded by Sacramento, which has an average expenditure per pupil higher than the state average, and which is not a "distressed" school district, could be handled by other districts which are not in as good financial shape.
