WHITE Gazette Home Economist To buy a home freezer or not to buy a home freezer is the big debate in progressive homes today. There is no standard answer to the question since each family must decide whether this piece of equipment is worth the money invested from the standpoint of convenience, time and money saved. A rural or farm family does not have to think twice. For them there can be real money saved. City and suburban family savings from a cash standpoint depends entirely on how efficiently a freezer is used. If there is opportunity to buy food in quantity at reduced prices, and the turnover in this food bank is constant, food bills can be cut substantially. The big advantage, however, is convenience. The advantages of cooking with cold are legion. With the kitchen range as a silent partner, whole meals can be prepared ahead of time and popped into the freezer to be stored and then re-heated at a minute's notice. Planned left overs give the cook many free hours since doubling or tripling recipes usually takes little extra time but provides a parade of soups, stews, desserts and the like for future meals as well as the one at hand. Never a scrap of food need be wasted. The deep freeze will always have an empty corner for odds and ends that can be turned into tasty sandwich fillings or a lunch for two at a later date. "I'm in the mood for cooking," sings the little woman, and the family table groans with hot breads, cakes and pies. But its either feast or famine. Comes an afternoon of bridge, heavy house cleaning or the kiddies in bed with colds and meal time is rather hit or miss. Nt so with a deep freeze on the premises. Out comes a half a cake, out comes frozen rolls, out comes meat balls and spaghetti sauce. There are a host of minor miracles to be performed with chest type will usually little greater storage cap. LOS ANGELES — The two-month old strike of 275 bus drivers for Continental Trailways Western lines was settled today when company and union officials agreed to arbitrate three dismissal cases, the union announced. The company hoped to resume service at 12:01 a.m. (PDT) Friday on all lines. How big? How big should a home freezer be? This depends on the use it is put to, the size of the family, the space between trips to the market and whether or not it is to absorb the yield of a kitchen garden. And since a home freezer is a major investment, these questions are best answered with an eye on what the next five or ten years will bring. Too large a box is an extravagance; too small a box is an annoyance. The Department of Agriculture suggests five cubic feet of freezer space for each member of the family. Types of Freezers Most freezer-manufacturing concerns are large and reputable so there is little risk involved with the purchase of a well known brand. As an added protection for good installation and service, it is wise to buy from a local dealer. Available space for a freezer in the home is usually the factor which makes the choice between the upright type and the box-like chest. The upright type takes up less floor space and food is more easily accessible. However, when the cubic footage is the same, the LOS ANGELES (T)—The twimonth old strike of 275 bus drivers for Continental Trailways Western lines was settled today when company and union officials agreed to arbitrate three dismissal cases, the union announced. And electric controls provide a degree of accuracy to protect every step of meal preparation which no other method can equal. Nice part about that accuracy, too, is that it’s possible even with completely automatic operation all the way. Electric cooking keeps precision at work even when the cook is away doing some other job, at play or just relaxing. And the results are a homemaker’s dream—perfect every time. You’ll like an all-electric kitchen, too. And if you install it in planned stages, you can complete it with no strain at all on your budget. See your electric dealer. FOODS THAT FREEZE WELL. Cakes may be frozen plain or frosted. Neat and tidy is the trick of storing a frosted cake in the freezer unwrapped until the frosting has hardened. This prevents the frosting from sticking to wrappings. Here's a frosting that freezes well: FREEZER FROSTING 3 tablespoons butter or margarine 2 cups sifted confectioners' sugar 4 tablespoons cream or top milk coloring and flavoring as desired. Cream shortening with one-half cup sugar and flavorings. Stir in the remaining sugar alternately with the milk or cream which has been scalded. Beat until smooth and add coloring. Spread on a two layer eight inch cake. FROZEN FRUIT SALAD Most salads do not like the freezing treatment. A notable exception is a rich fruit salad with cream cheese and whipped cream as its base. 3 tablespoons mayonnaise 1 3-oz. package of cream cheese. 1 cup mixed fruit (strawberries, peaches, cherries, etc.) 1 cup orange sections, cut in small pieces 1 cup drained crushed pineapple ½ cup chopped nut meats ½ cup halved maraschino cherries 1 cup whipping cream Soften the cheese with mayonnaise. A WORD TO THE WISE Do not freeze potatoes in any pre-cooked dishes as they tend to become mushy when frozen. And leave out hard-cooked eggs as well as they become rubbery. Lettuce and mayonnaise had better be left omitted from frozen sandwiches. Most home-makers find that pies that have been frozen unbaked have a flakier, more tender crust than do pies that are baked before freezing. Freeze cooked meats in a surrounding sauce or gravy.
