For Results and Quick Anaheim Gazetteer by JOHN S. NEUBAUER Be of good courage, and let us behave ourselves valently for our people.—I Chron. 19:13. ANAHEIM, Calif., Alt. 158, Pop. 14,552, was settled by a German colony from San Francisco. After several unsuccessful years of wine grape growing, the settlers turned toward the development of citrus fruits and today the city is surrounded by the world's leading Valencia orange district — vivid testimony to the far-sighted un-tiring effort. While in Anaheim one should visit City Park, a beauty spot containing relics of the early days. Large orange packing houses surround Anaheim and factories of many by-products are numerous. A Polish settlement, two miles east of the city, gained prominence at the turn of the century when Madame Modjeska (the great actress) and Henryk Stienklewicz (author of Quo Vadis, et cetera) established homes and lived there for several years. Madame Modjeska also maintained Civic and Social Dinners Often Offer Mother a Night Off from Dish Washing By JOAN S. WHITE The wonderful home-cooked meals put on by our various civic groups, churches and P-TA's are an excellent help for the average family who is trying to beat down the high cost of living. Since some of the food is donated, and the labor is all supplied by hardworking public spirited home-makers, the cost of these meals in relation to the food served is usually low. The various organizations put on the meals as good will gestures or as money makers, and the proceeds go toward furthering their good works around town. We happen to know of the high quality of these means because we are often consulted about the details of food buying and preparation of this quantity food production. We never cease to marvel at the hard work that goes into them and the bargain they offer to the budget minded. They also offer the home-maker a night out with no dishes to wash afterwards. BAKED BEAN DINNER Take, for example, the baked bean dinner that will be held at Lincoln school on Nov. 8 at 6 p.m. Ways and Means Chairman, Mrs. L. H. Brown, tells us that it will be put on by the ladies of the Lincoln P-TA. Mrs. Brown, who hails from New England, is of Amounts to buy and length of cooking time are puzzlers too. We are always glad to help readers solve these special problems and have received so many requests for recipes suitable for quantity meal service that we will print large quantity tested recipes from time to time. SWEDISH MEAT BALLS 240 servings 20 pounds ground beef 20 pounds ground pork 20 pounds ground veal 40 eggs 5 qts. bread soaked in milk 2 tablespoons salt 2 tablespoons sage 4 bunches celery, chopped fine 5 quarts of water (will vary depending on dryness of meat) 6 cups catsup (not in meat halls but in gravy) Combine ingredients and roll into balls. Roll balls in flour and fry until brown. Put in covered roasters and cover with gravy made from frying the meat balls. Add the catsup to this gravy. Bake at 350 degrees for one and a half to two hours. APPLE CRISP 50 servings 40 tart apples, medium sized 2 tablespoons cinnamon 4 pounds sugar HISTORY—That's the concise history of Anaheim as it appears in the Auto Club of Southern California's folder of maps—Los Angeles to San Diego, Ten thousand and of these pamphlets were printed. Ernie Moeller ought to be interested in this terse, concise history and should see that Southern California's leading historical society is notified of the discrepancies in its source material... Anaheimners were successful in their wine grape growing venture. It was only after numatodes killed the grape vines that the pioneers turned to walnut and citrus culture. INDUSTRY—What about Anaheim industry? The same publication lists Fullerton as having 22 factories and fruit packing plants... Those in the know would wager that Anaheim's industrial payroll would equal Fullerton's. BREA—No mention is made of the City of Brea, but let the Old Gazetteer say that the Brea-La Habra area will soon be on the map. Industry is finding out that North Orange county is ideal for large plants. For the most part, the soil is good and well-drained. Transportation is adequate and manpower is available. GROWTH—Most of Orange county is experiencing an industrial expansion. Payrolls are coming to almost every city with the exception of Fullerton and Laguna Beach who are striving to maintain their residential status through restrictive planning commissions. Fullerton, it seems, would not have had a bedroom town early days. Large orange packing houses surround Anaheim and factories of many by-products are numerous. A Polish settlement, two miles east of the city, gained prominence at the turn of the century when Madame Modjeska (the great actress) and Henryk Stilenkiewicz (author of Quo Vadis, et cetera) established homes and lived there for several years. Madame Modjeska also maintained an estate... located in nearby Santiago Canyon. Mrs. Brown, who hails from New England, is of course, in charge of the beans. They will be the authentic New England variety, baked slowly for hours with plenty of salt-pork and molasses, and served family style with salad, pickles and relishes, hot rolls and a grand dessert. Only 250 tickets have been printed and they are going fast. Mrs. W. A. Hutton is in charge of tickets. Her telephone number is 5363. As the dinner is being held on the regular P-TA meeting night, diners are invited to stay and enjoy an interesting program afterwards. QUANTITY RECIPES No matter what your friends tell you, cooking for a crowd is quite a bit different from the family meal service we are used to preparing for. It is not always practical to simply double, triple, or multiply further a home recipe, and many of the foods served at home do not lend themselves well to quantity cookery. There is the problem of oven and top of the range space to be considered, equipment on hand, and general acceptability of the dish. Will the food retain its taste and appearance if it stands a few minutes—or longer as it invariably will? Will the chosen menu combination look appealing on the individual plate? Wacs Head for Korean War in Clerical Work WASHINGTON (P)—Some 600 WACS are going to Korea to take over behind the lines jobs now held by men. Assistant Secretary of Defense Anna Rosenberg disclosed the figure yesterday to the Advisory committee on women in the Arm- GROWTH—Most of Orange county is experiencing an industrial expansion. Payrolls are coming to almost every city with the exception of Fullerton and Laguna Beach who are striving to maintain their residential status through restrictive planning commissions. Fullerton, it seems, would rather be a bedroom town. The city has had a phenomenal growth through its expanding residential districts. Fullerton is by far the largest city in the county—territorially in square miles, that is. Building permit figures will verify this. Santa Ana; the Newport-Balboa area; Fullerton and then Anaheim are steadily growing. New subdivisions and new plants are springing up where orange groves once were cultivated. TRANSITION—We've likened the transition from the grape culture to citrus and walnuts to the change that is taking place today. Homes are replacing orchards. Where it was once a sacrilege to uproot an orange tree, subdividers think nothing of it today, because they're building for a brighter tomorrow. In years to come, many of us will look back on these epic-making days with amazement. The Valencia orange is doomed in this neck of the woods. LONDON UP—More than 6000 London University students staged a two-mile Guy Fawkes parade last night. In ancient days hanging was a mark of indignity practiced on the corpses of criminals. WACS TREAD FOR Korean War in Clerical Work WASHINGTON (UP)—Some 600 WACS are going to Korea to take over behind the lines jobs now held by men. Assistant Secretary of Defense Anna Rosenberg disclosed the figure yesterday to the Advisory committee on women in the Armed Forces. Mrs. Rosenberg heads the committee. The WACS are members of the Women's Army Corps. It was reported they were requested by Gen. James Van Fleet, commander of the 8th Army in Korea. Some WACS are already in Korea. They are used in various clerical capacities. MOSCOW (UP)—Marshal Rodion Malinovsky, the Soviet Union's leading commander against the Japanese in World War II, will review tomorrow's giant Red Square parade.
