Anaheim food markets are chock full of foods to make Lenten meals particularly satisfying. The fish, cheese, and eggs which we substitute for meat many times during Lent are easy on the pocketbook and high in food value. In fact, the state extension service has just released figures which show that the most economical sources of animal protein are cottage cheese and dry skim milk, both of which could have a prominent place in Lenten meals. If you have not been using dry skim milk, it might pay you to stop in at the Pacific Health Food store and get a pound to experiment with as you cook this week. Merely add water to have it equal the fluid milk at the cost of about eight cents a quart. To increase the protein and mineral content of ordinary foods, dry milk in its powdered form may be added to meat loaves and patties, cream sauces, quick breads, cookies and puddings. We are lucky that quick frozen fish has reached the perfection it has. Now we can buy a variety of fish fillets and steaks, many of them absolutely boneless and cut into serving size pieces, as fresh as the day they were caught. Safeway has advertised specials on fillet of cod, salmon, ocean perch and whiting as well as halibut steaks and green shrimp. Our family enjoyed Safeway's frozen salmon fillets last night. I broiled them with a smattering of butter and served the fish with lemon wedges and chopped parsley. A pound package yields three to four generous servings. Tuna fish values make news at Alpha Beta. Here is a recipe which makes good use of tasty tuna. Mix the ingredients into a tuna loaf or tuna fish cakes and this is the way you do it: **TUNA FISH LOAF** 2 cups tuna fish ½ cup milk ½ cups soft bread crumbs 2 eggs 1 teaspoon salt 1 tablespoon lemon juice 2 teaspoons chopped parsley Drain the oil from the tuna and flake it. Add bread crumbs to the milk and simmer on the stove for five minutes. Stir in the other ingredients. Pour into a greased baking pan and set the pan in hot water. Bake until firm, about 40 minutes at 350 degrees. Or make tuna fish cakes by shaping the mixture into flat cakes, flouring lightly.
