The makings of a complete meal for four people at less than a dollar with one quick trip to the store and 15 minutes spent in the kitchen is food news these days. Yet anyone can work this magic by taking advantage of the refrigerated self-service delicatessen department at Alpha Beta Markets.
Think of it—chow mein atop crisp Chinese noodles accompanied by tangy cole slaw with fruited jello for dessert. Or fat little weiners surrounded with succulent sauerkraut with potato salad on the side and topped off with creamy rice custard or perhaps a delicious wedge of cheese cake.
The combinations are endless for the long counter is filled to the brim with cheese (120 different kinds), fish, cold meats, and cooked foods.
These delicacies are delivered fresh every day to the local Alpha Beta stores from a main commissary located in Bell, California. Women cooks prepare the food as near to the home-made as is practical with such large quantities, and the emphasis is on quality. The sausage kitchen is supervised by an old German sausage maker who really knows how. The foods are prepared under ideal conditions of superb cleanliness and a state inspector gives his approval to every morsel.
At the east end Alpha Beta Market in Anaheim, I talked with the man who originated the idea of the self-service delicatessen in a grocery store. He is Charles Du Pont, production manager for Alpha Beta Food Markets.
He first had the opportunity to try out his idea in two small stores. It had immediate appeal and in three years, has developed into a million dollar business.
Mr. Du Pont has kept in close contact with shoppers to determine their needs and preferences, and has arranged for food to be prepared as the public wants it. The guarantee on every package reads "Your money gladly refunded at any Alpha Beta Market if this package is not satisfactory as to quality and freshness. Simply return the empty wrapper with your comments."
The jello comes in plastic refrigerator dishes. Cheese spread is packed in a unique plastic container with a lid which is very handy to send along in a lunch box.
Meats are packed in unusual air tight containers. It is practical, for example, to use a few weiners from a package and store the remainder in their original container. You know they are fresh because their preparation date is stamped on the package. In these days of high meat prices, economical meals can be planned around these packaged meats.
Those of us with European backgrounds revel in the selection of smoked fish. The English kippers, famed in song and story, are the real article and may be boiled, broiled, fried or baked. Smoked barracuda makes an interesting variation to recipes calling for tuna.
Youngsters who carry their lunches to school enjoy the prepared sandwich spread. Made as it is from finely ground choice meats in combination with mayonnaise and sweet pickle relish, it is nutritious as well as good tasting. Since it is ready to use, it saves time for the one who packs the lunch.
Nearly every country in the world is represented by the assortment of imported and domestic cheese. Few know of Proveloni, an Italian type cheese which is smoked after curing. It melts beautifully and makes delicious sandwiches or appetizers.
Sap sago is an imported cheese made with a mixture of Swiss herbs. It is made to be grated and makes an excellent sandwich filling when mixed with cream cheese. It gives a delightful flavor to cooked dishes. Simple baked dishes with sap sago added become something quite out of the ordinary.

Fullerton Cannon Slate Announced
Two afternoon and two even classes in upholstery will be first of the Fullerton E Junior college offerings to this school year, according Logan Wheatley, principal. upholstery classes will start week of September 5, with institution opening Monday, August 28, 1 p.m., at the Evening Office.
Registration in the upholstery classes will be open to those have not had it before. Wha said, with those who wish to peat the course being placed "waiting list."
Other classes in the E Junior college will begin September 18, Wheatley stated, with week of September 11 set aside registration.
The registration office will open 1-5 p.m., Monday through Thursday, during the week August 28.

SIDELINE SLANTS — Oscaw Gibbs, the ANAHEIM lumber company executive who lives in Yorba Linda, is having difficulties in Fullerton. He has a housing problem all of his own since Fullerton Mayor Thomas Eadington's million-dollar juice plant went into production. Tom Hoag was much too busy to attend the elaborate reception on San Diego held for Florence Chadwick, the 31-year-old typewriter-painting channel swimmer. ANAHEIM's premier swimmaster is too busy painting his house and directing a watershow for Dick Glover Thursday night. He and Bob Williams are also in the swim, doing the comedy dive exhibition at Brea this weekend. Now that the Orange county fair is history, Heavenly Helen Welr, the ANAHEIM lovely, can enjoy her prizes. Beijing Queen is hard work. L. W. Hypes, who peddles the pause that refreshes, never misses a chance. Lou will see to it that ANAHEIM's queen gets worldwide recognition through his company.
