Simmer until sauce is sizzling hot. Serve at once — good eating for four people. A great many men in this part of the country are partial to Spanish food. Here is a recipe for tacos that was sent in by our "good cook of the week," Miss Mabel Anderson, 418 E. Chapman Avenue, Fullerton. Miss Anderson teaches all the homemaking classes at La Jolla Junior High School. She is well known for her work in the Orange County Section of the California Home Economics association, and is state councilor for the organization this year. The girls in Miss Anderson's homemaking classes often make these tacos and sell them at noon hour to raise money for the student body. The teachers, pupils, and I think they are especially good. TACOS (Specialty La Jolla Junior High School Girls) Filling: 1 lb. ground round plus 2 tablespoons fat. ½ can tomato sauce 2 large potatoes, boiled with skins on ½ to 1 teaspoon each salt, pepper and oregano ½ cup diced cooked carrots (optional). Saute the ground round in about 2 tablespoons fat until brown. Add the tomato sauce and seasonings. Cube the boiled potatoes. Saute in small amount of fat 1 lb. ground round plus 2 tablespoons fat. ½ can tomato sauce 2 large potatoes, boiled with skins on ½ to 1 teaspoon each salt, pepper and oregano ½ cup diced cooked carrots (optional). Saute the ground round in about 2 tablespoons fat until brown. Add the tomato sauce and seasonings. Cube the boiled potatoes. Saute in small amount of fat but DO NOT brown. Add salt and pepper to taste. Stir well. Mix with the meat mixture and add diced carrots if desired. Partly fill day old corn tortillas. Fold in half. Fry in hot lard until crisp. Always use lard to about ½ inch depth in your frying pan. Add chopped, crisp lettuce to the taco, and serve with Salsa Sauce. SALSA SAUCE 1 No. 2½ can solid pack tomatoes 3 or 4 medium onions, chopped fine 1 can tomato sauce ½ can El Pato sauce Mix all ingredients together. Makes enough for approximately 1 dozen tacos. Be kind to your refrigerator. It is the most important appliance in your kitchen during hot weather. To get the most from your refrigerator at a minimum cost to you, observe a few important rules. 1. Do not open your refrigerator door any oftener than necessary. Take out all things needed for a meal at the same time. See that children stay away from the box. 2. Be sure that foods are cooled down to room temperature before putting them in the box. This especially applies to left overs. 3. Avoid quick freezing if you want to save power costs. The higher you set the temperature control, the more power it will take to keep the box at the lower temperature. 4. If you go away on a vacation, turn the refrigerator off entirely, but be sure you leave the refrigerator door open after the power is turned off or a bad smell is likely to develop. 5. Defrost your refrigerator whenever the ice around the freezing unit gets one quarter inch thick. If you do not, the thick ice will act as insulation and the machine will actually have to work harder to keep the box cold. 6. Keep your refrigerator clean turn the refrigerator off entirely, but be sure you leave the refrigerator door open after the power is turned off or a bad smell is likely to develop. 5. In a gas refrigerator the dust which accumulates at the bottom of the refrigerator should be periodically cleaned out. 7. Do not pack your refrigerator full of food, packages and cans. Free circulation of cold air inside the box is important to adequate refrigeration. Take the outer wrappings from meat before refrigerating it. Do not put anything in the box that does not actually need refrigeration. Be sure the outside door works properly. The purpose of the rubber gasket around the outside of the door is to keep the box air tight. Avoid touching the gasket with greasy hands, as grease deteriorates rubbr. To test the efficiency of the gasket, lay a slip of paper on the edge of the rubber and close the poor. If the paper can be easily pulled out, warm air is getting into the box.
