Get Set For Canning A handy way to clean the pressure gauge and vent on your pressure canner is to use a pipe cleaner, as shown. BEFORE you know it, your garden will be overflowing with luscious red berries, green beans and peas. Is your canning equipment ready to help you capture all this goodness? This year, more women than ever before will be preserving by the pressure cooker method. The U.S. Department of Agriculture recommends it as the one completely safe method for processing non-acid foods. Only the penetrating heat attained by steam under pressure assures complete destruction of heat-resistant bacteria which cause food spoilage. Tops in the pressure canner field is the National Cooker-Canner, easy to operate and available in an array of sizes to fit your needs. Just being introduced is the new, large-capacity No. 21, which holds 18 pint jars, seven quarts or four two-quart jars at a time, an ideal size for the homemaker who can extensive. If you already have a pressure cooker-canner, this is the time to check it over. The pressure gauge should be cleaned with a pipe cleaner. Then see that indicator rests against pin and arrow points to zero. To test for steam leak, place one quart of water in canner, exhaust and bring to 15 pounds pressure. If leak exists, it is difficult to attain and hold pressure. In this case, remove and re-insert sealing ring according to instruction book. Remove and clean over-pressure plug, and draw pipe-cleaner through vent pipe. Discoloration may be removed by using a solution of one tablespoon of cream of tartar to one quart of water. SWEET RECIPES BY ADELE HOLLY Director, Holly Sugar Kitchens Minted Pears for Spring Lemon ½ cups sugar Green food coloring Dash of salt Peppermint extract 1 cup water or oil of pepper Stir sugar, salt and water together in saucepan until sugar is almost dissolved, then boil for 5 minutes. Add coloring gradually, drop drop, until desired shade of green reached. Flavor to taste with malt extract (oil of peppermint is strong—only a few drops are required to flavor syrup sufficient). Peel pears, cut in half, and add pears to syrup. Bring syrupy the boiling point and simmer pear about 15 minutes, or until they tender, transparent and tinted emerald green. Drain pears. Seal hot or chilled with roast lace. NOTE: Minted Pears are an excellent dessert served ice cold with spoonful or two of the syrup, garnished with whipped cream toasted almonds. Syrup for Waffles 1 cup fruit juice or syrup from cooked fruit ⅓ to ½ cup sugar Dash of salt Cook together fruit juice and supersize for 5 minutes. Remove from hull and stir in lemon juice and sift (The amount of sugar required depends upon the sweetness and character of the juice used.) Serve syrup so that the waffles won't be chilled if desired, butter or margarine may be added to the syrup—stir before pouring over waffles. Subtle White Sauce Add 1 teaspoon of sugar to 1 standard medium or thin white sauce to serve on vegetables. Touch of sugar complements flavor of the vegetables, gives them added goodness. Fried Pies New Eating Sensation A delightful new experience in eating is the crispy golden fried pie made with a meat or fruit filling. To describe it would be difficult, according to Reba Staggs, food authority, for it comes about half way in between a turnover and a croquette. Fried pies are individual affairs made with flaky, lard-tender pastry or rich biscuit dough, filled with fruit or meat, and fried to perfection in deep, hot fat. If made with biscuit dough, roll dough ¾ inch thick, then cut an even number of rounds with a fair-sized cookie cuitter. Dot half the rounds with a heaping table-spoon of the desired fruit or meat mixture, place the other rounds on top, and press the edges together. Fry in deep hot lard (360F.) until golden brown, then drain on absorbent paper. Serve piping hot. If made with a meat filling, you may wish to serve with a gravy. A tart-sweet applesauce filling is delicious and a spicy apricot or mellow peach filling is just as good. For a meat filling use cooked meat (left-over, canned, ready-to-serve) moistened with gravy, or cream or brown sauce, and flavored with onion and spices. Canadian-Style Bacon Plays Picnic Role Picnic moods are in the air with the first prolonged period of warm weather. Plan a ready-to-eat picnic menu, says Reba Staggs, well-known food authority, and you will be off for the great out- con and golden pineapple chunks on the tines of a large roasting fork—one kabob on each tine. Like other homemade mixes, it is made with lard and can be stored in the refrigerator at least a month, says Reba Staggs, home economist. This recipe yields 7 cups of mix. About 1½ cups is needed for a 6x10” pan of the treat. All that’s required is to add ¼ cup molasses, ½ cup sour milk and 1 beaten egg to the 1½ cups of mix. Bake in 400F. oven for 25 to 30 minutes. With delicately flavored rhubarb, gingerbread is an idle accompaniment. Served sweet whipped cream, or just butter or margarine it speaks of own savoriness. Gingerbread Mix 4 cups sifted enriched flour 1 tablespoon soda 1 teaspoon baking powder 1 tablespoon ginger 1 teaspoon cinnamon 1 teaspoon salt ¾ cup sugar ¾ cup lard or drippings Sift all dry ingredients together. Cut fat into dry ingredient until fine as corn meal. Coarsely and store in refrigerator until ready to use.
