FISH are "nutritional buys"
FISH are one of the top-notch "nutritional buys" on the market—and definitely! So if you're interested in saving those red point coupons of yours (and who isn't, pray tell?) you may want to brush up on some of the important fine points of fish cookery.
FRYING—Steaks or fillets about ½-inch thick or small fish of equal thickness cook through more evenly than thicker fish.
To remove skin, soak the fish about 25 seconds in boiling water, put on plate and pull skin off. Fry in any clean fat.
Cut fish into serving portions. Dip in beaten egg, milk or water, cover with corn meal, flour, cracker or bread crumbs and season. Place the fish in hot skillet and fry over moderate gas flame. Cover skillet and remove from fire to cook fish in its own steam about 2 minutes. Remove cover, turn fish, and cook 3 minutes longer.
BROILING—Brush the pan and fish with oil and broil 2½ inches from gas flame to desired brownness. Fish need not be turned.

BOILING OR STEAMING—Use 3 tbsps. salt in 2 qts. boiling water. Place one layer of the fish cut into serving pieces into an oiled basket or perforated pan, and then into boiling salted water. Cook 8 to 12 minutes or until tender. Remove and drain.

American light and medium bombing planes, in service on nine war fronts in as many sections of the world, are meeting and besting the finest warplanes the Axis powers have yet been able to send against them. MRS. FLORENCE PARKES SAVAGE, born 86 years ago in St. Louis, Mo., died Monday at the home of her son-in-law, C. A. Danly, 1100 West Center street. She came to this city 14 years ago to make her home with her son-in-law and daughter, and since the death of Mrs. Danly a few years ago had remained as a loved member of the household.
She is survived by two sisters and two brothers, Mrs. Grace Douglas, Mrs. Frances Coffman and John Parkes of Los Angeles, and Charles E. Parkes of Inglewood. There was recitation of the Holy Rosary Tuesday evening in the Backs, Campbell and Kaulbars chapel, followed by mass yesterday morning in St. Boniface church. Burial was in Holy Sepulchre cemetery.
MRS. ANNA MARY PENNINGTON, who came from her home in Iowa five months ago to visit her daughter, Mrs. Roy E. Noller, North Claudina street, was cared by death very suddenly Monday evening.
Mrs. Pennington, who was borne in Sigourney, Iowa, 69 years old was planning to spend Easter Phoenix with her son, Dr. J.W. Pennington. She was writing a letter to him regarding her wartime plans.
Instead she is returning to childhood home, for the remnants have been shipped by Bailey Campbell and Kaulbars to Sigourney for burial.

Salvage Metals Are Rapidly Moved
A sum slightly in excess of $633 realized from the city's salvage collections of metal and rubber, will be applied to the expense of the civilian defense work, according to reports given at this week's meeting of the city council. Members were informed that 169,260 pounds of scrap metal already had been moved out rapidly. More than 24,000 pounds of scrap rubber have had sold, adding $185 to the civilian defense funds.
