Stuffed Green Peppers

3¼ cup raw rice* ½ teaspoon pepper
6 cups boiling water 2 cups grated American cheese or 6 oz. diced, packaged variety
2¼ teaspoons salt
6 large green peppers
1½ tablespoons butter or other shortening
10¼ oz. can condensed tomato soup
3¼ cup Pet Milk 6 tablespoons water
Boil rice until tender in boiling water and 1½ teaspoons salt. Drain and rinse with hot water. Turn on oven and set at moderately slow (350° F.). Cut off stem end of peppers, then remove seeds and fibers. Cut stem ends into small pieces. There should be ¾ cup. Cook pieces of green pepper slowly for 5 minutes in butter. Add milk, remaining ¾ teaspoon salt, the pepper and 1½ cups grated cheese or 4½ ounces of the diced, packaged variety. Cook over boiling water until cheese melts and mixture is smooth, stirring constantly. Add cooked rice and mix thoroughly. Fill prepared peppers with rice mixture. Sprinkle tops with equal portions of remaining ½ cup grated American cheese or 1½ ounces diced, packaged variety. Put in baking pan containing a mixture of soup and water. Bake 30 minutes, or until peppers are tender. Serve at once with the sauce. Serves 6.
*3 cups chopped, cooked noodles, macaroni or spaghetti may be substituted for the rice, boiling water and 1½ teaspoons salt.
