AXE THE AXIS Watch Your Family Go Wide-Eyed When They Taste These Superbly Delicious Cherry Desserts When George Washington cut down his father's favorite cherry tree over two centuries ago, little did he dream that the sound of his hatchet would reverberate through the years, and be tapping right now at your kitchen door to remind you that February is Cherry Month. Regardless of whether or not the cherry tree incident is true, this is the season of the year when homemakers give the role of honor to that handy menu helper—the canned cherry. The month of February has also been referred to as the party month, as it marks a season of the year when women love to entertain. In the first place, they have an excuse—several of them in fact, because in addition to Washington's Birthday, we also observe Lincoln's Birthday and St. Valentine's Day. All of these events offer hostesses a chance for parties and it is also an ideal time to entertain the bridge club or repay social obligations. Homemakers have an opportunity to use their ingenuity in developing special menus and working out color schemes in the foods they serve. A red, white and blue color scheme is a foregone conclusion for Washington's Birthday, and the refreshments are sure to include the ever popular red cherry, tart or sweet, canned or frozen, or the maraschino variety. In fact, the month of February and particularly the period from the 15th to the 22nd, which for the past eleven years has been officially proclaimed as National Cherry Week, is a time when every homemaker will have an opportunity to prove to her family what a wealth of desserts she can develop with cherries. Whether these cherry desserts be pies, tarts, cakes, custards or salads, the homemaker who prepares any of these "praise getters" is bound to rate "tops" with her family and friends. For a starter, see how the canned cherries in this Cherry Banana Mold win over even the fussiest appetite, because they have a flavor that's temptation itself. Cherry Banana Mold 1 No. 2 can red tart 1 c. heavy cream, pitted cherries whipped ½ c. sugar 1 c. sliced bananas ½ c. cold water ¼ c. black walnuts, 1 tb. unflavored gelatin broken, or other nuts Drain juice from cherries. Add sugar and heat to boiling point. Then add the gelatin that has been soaked in the ¼ c. cold water. Cool mixture to thick creamy consistency. Then whip and fold in the cream, bananas, nuts and half the cherries. Pour into desired molds and chill until firm. Garnish with remaining cherries and whipped cream, if desired. Serves 0 to 8. Here's a dessert that's a credit to any hostess. You'll want to serve it soon because it's one your family or guests will long remember. Cherry Torten Torten Layer: 1 c. sifted flour 1 tb. sugar ½ tsp. salt ¼ c. butter 1 egg yolk, slightly beaten Combine the flour, salt and sugar. Cut in the butter with knives or pastry blender. Add beaten egg yolk and mix thoroughly. Press this mixture into baking dish 10 x 6 x 2 or a pie pan may be used. Cover with cherry topping and bake at 425 F. for 15 minutes. Then reduce heat to 350° F. for about 20 minutes. Serve hot or cold. Whipped or plain cream may be served with the Torten. Cherry Topping: 1 No. 2 can red tart ½ c. sugar pitted cherries 4 tb. cornstarch 1 tb. butter Drain juice from cherries. Heat to boiling point. Combine sugar and cornstarch. Add enough cold water to make a smooth pouring paste. Pour this gradually into the boiling cherry juice. Cook 5 minutes, stirring constantly. Remove from fire and add the cherries and butter. Hanna, enroute to any unwatched port on the South China coast, Aug. 24, 1940. It is like beginning life a second time to actually be on the way home. Ever since boarding this boat this afternoon I have been full of new zest and hope. This narrow deck of steel, pine and oakum thrills me with the prospects of home. Resolutions of a new start in life were chasing each other through my mind:—“get up every morning when the alarm clock rings” — “do language lessons complete each day” — “anticipate Ellen's every wish and desire” — “surprise her with husbandly attentiveness” — “never scold Edward” — “Paintakingly explain every little thing his mind questions” — “make home a gilt edged heaven in spite of the war”—etc., when Captain Haaman came dow the deck. I rose and spoke to him. TO NINGPO? “You are going to Ningpo?” he asked. “Yes.” “Going this way is a long way around isn't it?” “Yes, there will be a long trip back overland, but there is no other way. I've tried the closer routes and couldn't get through.” “Do you know Shih-p'u?” he queried. CANAL BOAT “Yes, that is only a day and a half by canal boat from Ningpo. If we could get off there it would save us a week of hard overland travel. Is it possible?” “I can't say yet,” he answered. “You know we have our manifest made out for Ku-gnao-tou, south of Wenchow. But we go very close to land near Shih-p'u. If there are no Japanese gunboats watching we could call out a junk and let Churchill, the English girl.” “Do you have much baggage?” “No, not too much.” “We will hope there are no gunboats around. Anyway, we will do our best.” FINE OF YOU “It is certainly fine of you to take this trouble for us,” I answered. “Well, it is not too much trouble. Besides I don't want too many passengers on board when we get further down the coast It will be an advantage to me to get you off at Shih-p'u.” And with that rather suggestive remark he went on down the deck. I went to tell the others and we spent most of the evenng gloating over the possibility of getting through the blockade in the morning. Fashions by Mary A.
