RECIPES DISCUSSED AT ANAHEIM
GAZETTE COOKING SCHOOL LISTED
FIRST DAY
Wilson's Certified Bacon Roll
Lay several strips of bacon parallel overlapping the edge. On this spread a ground meat mixture of your own choosing. Use a combination similar to meat loaf seasoned to taste. Roll as for any spiral roll and secure with meat skewers. Lengthwise on one edge, spiced pickles, hard boiled eggs, pimento strips or stuffed olives may be laid end to end that will form a colorful center when roll is cut. This may be baked as a meat loaf or sliced between skewers (not over 2 inches thick) and broiled or pan fried. Again after pan frying; mushrooms, canned soup or sauces may be added and simmered until a perfect blend of flavor is established.
Tobasco and Horseradish
Meat Sauce
This will pep up your meat dishes. Heat a cup of milk. Add three slices Weber Bread, broken up. Add ½ cup horseradish, 4 drops McIlhenny's Tobasco Sauce, a sprinkle of salt. This is a snappy sauce reduce the amount of horseradish if too hot.
Red Chocolate Cake
2 cups flour, Cake flour
½ teaspoon KC Baking Powder
1 teaspoon soda
½ cup Crisco
1½ cups sugar
¼ teaspoon salt
1 teaspoon vanilla, Ben Hur
3 squares chocolate
2 eggs
1 cup milk
Sift and measure flour and resif
delicious used over the vanilla flavored pudding.
Toasted Bean Sandwiches
On slices of Weber bread which has been toasted spread Walker’s Austex Chili Beans then a thin slice of onion and a strip of Wilson's Certified Bacon and dust with Mexene Chili Powder and broil until the bacon is crisp.
Ham and Cheese
½ pound cheese
8 slices Weber bread
3 eggs
Butter
3 cups milk
1½ teaspoons salt
¼ teaspoon pepper
2 drops McIlhenny's Tobasco Sauce
Force the cheese through a coarse sieve. Trim crusts off the bread and butter each slice. Place a layer of bread in bottom of a buttered baking dish. Sprinkle with cheese and ground Wilson's Tendermade Ham and continue until the bread is used. Bring the milk to scalding point. Beat eggs, add salt, pepper, Tobasco Sauce and milk. Pour over bread, cheese, and ham. Bake at 375 degrees for 30 minutes.
Delicate Rolls
Add 1 package of Mecca Yeast to 1 cup luke warm water. Stir. Add 1 tablespoon sugar and let stand about 10 minutes. 80 dissolve yeast and sugar add 1 more cup luke warm water or milk, scalded and cooled to luke warm.
To liquid mixture add 3 cups
Ham and Hominy ala Tea
Drain 1 can (yellow) heat mash coarsely. Add 1 cup grit Wilson's Tendermade Ham beaten egg, a dash of salt enough Weber bread crumple form a patty mixture. Change in slices about ¾ inch remove the pulp and form patties within the orange Broil brown on one side, Broil other side until ready to serve and then with a little honey to whisk small amount of granulated sugar is added. Return to broiler w glaze is formed.
SECOND DAY
Biscuit Mix
8 cups Flour
1/3 cup KC Baking powder
4 teaspoons salt
½ cup Crisco
Cut the Crisco into the drippings which are sifted gether. Place in a covered tainer and keep in a cool Where Crisco is used it need be kept in the refrigerator to vent a rancid or “off flavor.” ready to make biscuits made the required amount and scant cup for 2 cups to melt blend dough. Biscuit dough be used for many different such as coffee cake, short pot pies, etc.
Short Cake Filling
A new touch for short cakes be made by ybeating stiff the of an egg, adding one cup poed sugar, like frosting. For crushed fruit or berries. Seen biscuits or cake.

1 cup lukewarm water
1 cup milk (lukewarm)
½ cup butter
Red Chocolate Cake
2 cups flour, Cake flour
½ teaspoon KC Baking Powder
1 teaspoon soda
½ cup Crisco
1½ cups sugar
¼ teaspoon salt
1 teaspoon vanilla, Ben Hur
3 squares chocolate
2 eggs
1 cup milk
Sift and measure flour and resift with baking powder, salt and soda. Cream, sugar and Crisco, add one egg at a time beating each then add melted chocolate and vanilla. Alternately add the sifted dry ingredients and milk. Bake in 2 nine inch cake pans which have been "Criscoed," 35 minutes at 350 degrees.
Creamed Filling
½ cup Crisco
1 package powdered sugar
1 whole egg
2 squares chocolate (melted)
½ teaspoon salt
1 teaspoon Ben Hur Vanilla
Top milk or cream
Place all ingredients except milk in an electric mixer and beat until light and fluffy. Add milk to desired consistency.
French Fried Cauliflower
Separate cauliflower into flowers and cook in boiling water until partially done. Drain. Roll in fine Weber bread crumbs, dip in beaten egg to which a little cold water has been added; roll in bread crumbs again. Fry in deep Crisco until golden brown at a temperature of 380 degrees. Add a small quantity milk to a snappy cheese and melt. Stir to form a smooth sauce. Pour over the cauliflower and serve hot.
Weber Bread Garnish
Bread cut in various shapes and toasted or better still fried in Deep Crisco make a tasty garnish. French bread and many rolled sandwiches are also appetite tempters when fried in Deep Crisco.
Honey Beet Relish
1 cup cooked beets (diced)
¼ cup grated horseradish
¼ cup vinegar
1 cup uncooked cabbage
2 tablespoons sugar
½ cup strained honey
¼ cup water.
Combined ingredients. May be served immediately or placed in sterilized Kerr jars and sealed for
Delicate Rolls

To liquid mixture add 3 cups sifted flour and beat until smooth. Then add 1 well beaten egg if desired, 4 to 6 tablespoons Crisco, 3 tablespoons sugar, 2 teaspoons salt and 3 more cups sifted flour. Knead into a medium firm dough, adding more flour or liquid if necessary.
Let dough rise until doubled. Fold or knead down and let rise three-fourths as much as the first time. Fold down again and divide into portions for rolls. Shape as you desire. Let rise in greased pans until doubled. Bake about 20 minutes in a medium hot oven (400) degrees.
Refrigerator Plum Pudding
1 tablespoon Ben Hur plain gelatin
½ cup cold water
1 cup milk
½ cup raisins or currants
½ cup sugar
½ cup dates, chopped
¾ square chocolate or 3 tablespoons cocoa
¼ teaspoon salt
2 egg whites
¼ teaspoon Ben Hur vanilla
Cook milk with the chopped fruit slightly, add chocolate melted with a part of the sugar and a little milk to a smooth paste. Soften the gelatin in cold water add the hot chocolate mixture, stir until dissolved, add the balance of the sugar and salt, pour into the milk mixture and stir thoroughly, cool. When the mixture tickens add vanilla and fold in the beaten egg whites. Turn into a mold and chill. Serve with whipped cream.

Short Cake Filling

Sweet Roll Dough
2 packages Maca yeast
1 cup lukewarm water
1 cup milk (lukewarm)
½ cup butter
2/3 cup sugar
1 teaspoon salt
2 eggs, well beaten
Grated rind and juice ½
½ teaspoon Ben Hur grate nutmeg
Sifted flour, 7 cups or more. Pour lukewarm water over yeast, let stand 10 minutes. Milk and cool until luke Cream together the butter, and salt, and eggs, lemon nutmeg. Add luke warm m softened yeast and blend liquid with 3 cups flour. Smooth, then add butter m and enough more flour to m medium soft dough. Knead s but keep as soft as can be ha with out sticking. Let rise in a cozy, warm place doubled. Shape into rolls a or knead down and let about ½ hour, then make rolls. Bake at about 400 de until delicate brown.
Deep Apple Pudding
Alternate layers of 2 cu

1 cup cooked beets (diced)
¼ cup grated horseradish
¼ cup vinegar
1 cup uncooked cabbage
2 tablespoons sugar
½ cup strained honey
¼ cup water.
Combined ingredients. May be served immediately or placed in sterilized Kerr jars and sealed for future use. There should be enough liquid to cover the vegetables.
Ben Hur Tea and Coffee
A sudden change of temperature changes the flavor of any coffee. For Iced Coffee cool before adding ice. Be sure to get the grind suitable for the manner which you choose to make your coffee. Ben Hur has the correct grind for economy and flavor; Drip, Silex or Percolator. Ice may be added immediately to Tea if desired as it does not effect the flavor as coffee. Ben Hur has a blend of tea especially for Ice Tea but all blends may be used.
Pastry Mix
Use one third as much Crisco as flour; ¾ teaspoons salt to each cup of flour. Cut the Crisco coarsely into the flour and salt (which have been sifted together). With Suremix Crisco less water is needed which insures a flakier crust. Keep pastry mix covered but it is not necessary to keep in the refrigerator.
Jell-A-Teen Pie Filling
Make chosen flavor of Ben Hur Jell-A-Teen Pudding according to directions on the package. Add 2 teaspoons Ben Hur Plain Gelatin which has been soaked in ½ cup cold water for a few moments. Cool, fill individual pastry shells, chill and serve topped with whip cream. Fresh fruit or berries are
Ham and Hominy ala Tony
Drain 1 can (yellow) hominy, wash coarsely. Add 1 cup ground Wilson's Tendermade Ham, 1 eaten egg, a dash of salt andough Weber bread crumbs to form a patty mixture. Cut orges in slices about ¾ inch thick, move the pulp and form ham ties within the orange rings. Oil brown on one side, turn. Oil other side until nearly ready to serve and then cover with a little honey to which a full amount of granulated sugar added. Return to broiler until a size is formed.
SECOND DAY
Biscuit Mix
1/3 cup KC Baking powder
1 teaspoon salt
½ cup Crisco
Cut the Crisco into the dry ingredients which are sifted together. Place in a covered cone and keep in a cool place. Here Crisco is used it need not kept in the refrigerator to prevent a rancid or "off flavor." When ready to make biscuits measure the required amount and use a pint cup for 2 cups to mix to end dough. Biscuit dough may be used for many different recipes such as coffee cake, short cake, pies, etc.

Sweet Roll Dough
packages Maca yeast cup lukewarm water cup milk (lukewarm)
½ cup butter
Weber bread crumbs, 2 cups sliced, unpared apples, and 1 cup grated American cheese in a greased baking dish, having the top layer bread crumbs. Mix ½ cup sugar, ½ teaspoon Ben Hur Cinnamon and ¼ teaspoon Ben Hur Mace; sprinkle over the top. Dot with butter; pour over 1 cup unsweetened pineapple juice. Bake in a moderate oven (350 degrees) 50 minutes.
Walker's Austex Casserole
Place a layer of Chili Beans and then Tamales and repeat until desired amount is used. Cover with grated cheese. Dust the top with Mevene Chilli powder and bake for about 30 minutes (or until heated through) at 350 degrees.
Apricot-Strawberry Jam
3½ pounds or 3 cups quartered ripe apricots
2 cups sugar
Wash apricots, pit, cut into quarters. Wash and hull strawberries; leave whole. Combine apricots and 3 cups sugar in a large perserving kettle; bring to a boil and boil for 10 minutes. Add strawberries and remaining 3 cups sugar; boil 10 minutes longer, or until thick, stiring occasionally. Let stand over night, stirring occasionally while cooling. Pour into sterilized Kerr jars and seal.
Nut Crunch White Cake
½ cup Crisco
1½ cups sugar
1 teaspoon Ben Hur vanilla
¾ cup water
4 egg whites
2 cups sifted cake flour
2 teaspoons KC Baking Powder
1 teaspoon salt
Blend Crisco, sugar and vanilla. Add water alternately with the sifted dry ingredients. Fold in the potatoes (left overs) add grated American cheese and teaspoon KC Baking Powder 1 beaten egg. Form in around Wilson's Certified Frankfruters. Roll balls in bread crumbs then beaten again into the bread French fry in Deep Crisco degrees until brown.
Filling
Raw apples diced or sliced thin, about ½ cup sugar depending on the apples used a sprinkle of Ben Hur cinnamon (may be a sprinkle of ginger). Fill the raw pastry shell generously and cover the top with a shappy cheese or fresh American cheese grated. Bake about 45 minutes at 425 degrees.
Baked Wilson's Tendermade Ham
This ham is processed and needs no boiling nor parboiling. Remove from the wrapper, place in a shallow pan fat side up, without water. Bake at 300 degrees for 5 minutes to the pound. Remove the rind, score and season as desired and return to the oven until the glaze is formed and slightly brown.
Frankfruter Balls
To two cups seasooed mashed potatoes (left overs) add grated American cheese and teaspoon KC Baking Powder 1 beaten egg. Form in around Wilson's Certified Frankfruters. Roll balls in bread crumbs then beaten again into the bread French fry in Deep Crisco degrees until brown.

teaspoon Ben Hur grated nutmeg
Sifted flour, 7 cups or more
Pour lukewarm water over frost, let stand 10 minutes. Scald milk and cool until luke warm.
Beam together the butter, sugar salt, and eggs, lemon and ameg. Add luke warm milk to fermented yeast and blend this mixture with 3 cups flour. Beat smooth, then add butter mixture and enough more flour to make a medium soft dough. Knead smooth keep as soft as can be handled out sticking. Let dough in a cozy, warm place until bled. Shape into rolls at once knead down and let rise about ½ hour, then make into pies. Bake at about 400 degrees until delicate brown.
Deep Apple Pudding
Alternate layers of 2 cups soft sterilized Kerr jars and seal.
Nut Crunch White Cake
½ cup Crisco
1½ cups sugar
1 teaspoon Ben Hur vanilla
¾ cup water
4 egg whites
2 cups sifted cake flour
2 teaspoons KC Baking Powder
1 teaspoon salt
Blend Crisco, sugar and vanilla.
Add water alternately with the sifted dry ingredients. Fold in the beaten egg whites. Bake in two "Criscoed" 8-inch pans 30 to 35 minutes in moderate oven (360 degrees).
Cooked Creamed Filling
Mix 1/3 cup sugar, 2 tablespoons flour, ¼ teaspoon salt, add 1 cup scalded milk. Cook over boiling water till thick; slowly add 4 beaten egg yolks. Cook 10 minutes. Cool. Add ¼ teaspoon Ben Hur Almond extract. Crush ½ pound peanut brittle finely; add half of brittle to half of the filling. Spread between layers. Coat sides with remaining filling. Ice top with sugar coating (mix 1½ cups sifted confectioners sugar with 2 tablespoons milk and ⅛ teaspoon almond extract. Cover the coated sides with the remaining peanut brittle.
NOTE: Watch Crisco adds for perfect, new cakes.
