COOKING SCHOOL RECIPES LISTED Miracle Cake 1 cup Crisco, 2 cups sugar, Aeggs, ½ teaspoon salt, 4 2/3 cups cake flour, 4 ½ teaspoons KC baking powder, 2 teaspoons Vanilla, 1½ cups milk. Cream butter adding sugar and salt. Beat until fluffy. Add whole eggs one at the time and beat well. Sift the dry ingredients together and add to the first mixture alternately with the milk. This makes the foundation batter for many variations of cake. May be kept in a refrigerator three or four days before baking. Varitions Layer cake, Upside Down Cake, Torte or Cottage Pudding. Spaghetti Supreme To be served as "half and half" with Chicken Ravioli. ½ lb. Ground Beef, 3 tablespoons Olive Oil, ½ cup Diced Green Pepper, ½ cup Diced White Onion, ½ cup Diced Celery. 1 quart can solid packed tomatoes, ¾ drops Tabasco Sauce, 1 teaspoon Salt, 1 teaspoon Sugar, 1 cup dry spaghetti. Heat Olive Oil in frying pan, in this brown ground meat and onions slightly. Add the balance of ingredients with exception of dry spaghetti, and bring to a brisk boil on "high" heat. Stir spaghetti on each baked cup cake and return to oven for 10 minutes. Flank Steak Filets 1 flank steak (about 2 lbs.), ½ lb. suet or salt pork (in one piece). 1 No. 2 can tomatoes or 1 can tomato soup, 1 green pepper, ½ onion, 3 drops tabasco, 2 teaspoons salt, ¼ teaspoon pepper. Method: 1. Have flank steak scored lightly. Cut suet or salt pork into strips one inch wide and one inch thick. Place strips down center of flank steak lengthwise. 2. Roll steak around fat and skewer tightly with 7 or 8 skewers, placed at intervals of 1½ inches along the roll. 3. Cut between skewers. 4. Dip filets in flour and brown slowly and thoroughly, on both sides, in a little Crisco (about 1 tablespoon). 5. Turn fire very low, add onion and pepper cut in thin slices, strained tomatoes or soup and seasoning. 6. Cover tightly and let simmer 1½ hours. 7. Remove meat to hot platter and thicken the gravy with 2 tablespoons flour mixed with ½ cup cold water. Serves 5 or 6. Broiled Wilson's Tender-Made Ham and Vegetables Broil one slice Ham on both sides until a delicate brown. Cooked or canned vegetables may be warmed on broiler pan; under ham on the rack. When ham is done, remove rack and place the ham on top of vegetables and garnish. 2 level teaspoons K C Baking Powder, 2/3 cup milk, 4 level tablespoons Crisco, 1½ teaspoons salt. Sift the flour once, then measure 2 cupfuls. Add the baking powder and salt and sift twice. Cut in the shortening, then mix to a non-sticky dough. Knead lightly on a floured board for a half minute. Roll to ½ inch thickness. Cut in rounds. Bake at 425 degrees for 12 minutes. French Fried Noodles Cook one package of noodles in boiling salted water until tender. Drain and dry well on paper toweling. Fry in deep fat at 380 degrees until golden brown.. Drain on unglazed paper or paper towelling and salt. Cheese Fondue 1 cup milk, 1 cup grated cheese, 1 tablespoon butter, ½ cup soft bread crumbs, ¼ teaspoon salt, paprika, 1/3 teaspoon dry mustard, 3 eggs separated. Cook first seven dry ingredients together in top of double boiler over boiling water. Remove from fire and pour over beaten egg yolks. Fold in stiffly beaten egg whites. Bake in well-greased baking dish 350 degrees—25 minutes. Star Fruit Dressing 6 tablespoons Olive Oil, 2 tablespoons honey, ½ teaspoon salt, ¼ teaspoon naprika, 3 tablespoons lemon juice, ¾ teaspoon celery seed Mix the honey with the salt Weber Bread Crumb Pudding ¼ cup Sugar, 3 tablespoons Melted Butter, 2 cups Toasted Weber bread crumbs, 1 teaspoon orange or lemon rind, 1½ teaspoons Nutmeg, 1 cup raisins, 1 cup buttermilk, 1 teaspoon salt. 1 teaspoon soda. Mix in order given and turn into a buttered mold and steam. May be served with fruit or hard sauce. Raspberry Sherbet 1 cup raspberry pulp. ½ cup lemon juice. ½ teaspoon lemon rind. 1 pint milk. 1 egg white. ½ teaspoon salt. 1¼ cups sugar. Dissolve sugar in fruit juices. When thoroughly dissolved, add the milk, stirring. Add rind and salt. Freeze this mixture to a mush (1 to 1½ hours). Remove from refrigerator, place in a chilled bowl. Add unbeaten egg white and beat 1 minute with electric breater. Return to chilling unit and freeze 1 to 2 hours. This is a lovely, creamy sherbet, and if directions are followed, will not become icy from standing. Variations: Omit raspberry plup and add: 1. Orange Sherbet—1 cup orange juice. 2. Pineapple Sherbet—1 cup pineapple, crushed. 3. Strawberry Sherbet—1 cup Strawberry pulp. 4. Apricot Sherbet—1 cup apricots. 5. Red Cherry Sherbet—1 cup cherry pulp and ¼ cup sugar if fresh cherries. Baked Beans—Broiled Sandwiches Split required number of buns Broiled Wilson's Tender-Made Ham and Vegetables Broil one slice Ham on both sides until a delicate brown. Cooked or canned vegetables may be warmed on broiler pan; under ham on the rack. When ham is done, remove rack and place the ham on top of vegetables and garnish. Green Pepper Tamales Parboil green pepper in salted water until barely tender. Drain. Arrange in shallow baking dish. Then fill with Chicken Tamale. Bake in moderate oven until nicely browned. Spanish Rice Wash rice thoroughly. Brown in frying pan with ⅛ cup Olive Oil, then add one No. 2½ can solid packed tomatoes, 3 drops Tabasco Sauce, salt and chili powder to taste, and cover tightly. Bring to brisk boil on high heat and then turn heat completely off. Cook on stored heat 20 minutes. K C Baking Powder Biscuits 2 cups flour, Star Fruit Dressing 6 tablespoons Olive Oil, 2 tablespoons honey, ½ teaspoon salt, ¼ teaspoon paprika, 3 tablespoons lemon juice, ½ teaspoon celery seed Mix the honey with the salt celery seed, paprika and lemon juice, and beat in the oil gradually. Makes about ¾ cup. Weber Bread Cases Butter slices of bread, crusts off Press into muffin tins and browns in hot oven. Fruit Pyramid Remove chooseen assorted fruits from cans and drain on paper towel. Color with vegetable coloring and arrange in ring mould and pour over cool lemon or lime jello made as directed on package Place in refrigerator and when seated and ready to serve, unmold on attractive service plate and fill center with whip cream. Place on a broiler until bacon is nice and crisp. Olive Oil Dressing Blend 6 tablespoons Olive Oil with two tablespoons vinegar or lemon juice. 1 teaspoon salt and ½ teaspoon white pepper. (For larger or smaller recipes keep this proportion). Different sauces and spices may be added to suit taste. McIlhenny's Tabasco Sauce adds a delightful zest to salad. Pecan Glaze Melt 2 tablespoons butter in a pan and blend with ½ cup brown sugar.
