BRAISED SHORT RIBS OF BEEF WITH VEGERONI "A Dish Men like"
3 lbs. short ribs of beef.
4 tablespoons Pompeian Olive Oil.
1 cup Ace-Hi Family Flour (for dredging meat).
Seasoning:
salt, Ben Hur paprika, celery, garlic, onion salt, Ben Hur pepper, bay leaf.
1 large chopped onion.
1 clove garlic minced.
1 teaspoon A-1 sauce.
1-2 cup Iris Catsup.
1 cup water.
1 package Vegeroni.
Few drops Mc Ilhenny's tabasco sauce.
Method: Season pieces of meat, dredge in flour, springle liberally with paprika. Heat oil in large frying pan, sear meat on all sides. Add onion, garlic, tomato catsup, A-1 sauce, tabasco sauce and water. Cover tightly, simmer 2½ to 3 hours in oven or on top of range. When about ready to serve, cook 1 package of Vegeroni in boiling salt water about 8 or 10 minutes and drain. Pile Vegeroni in center of large platter, arrange pieces of meat in border around edge. Add few drops Kitchen Bouquet to gravy and pour over all. Garnish with parsley and serve piping hot.

3 cups Ace-Hi Family Flour.
1 teaspoon K C Baking Powder.
1-2 teaspoon soda.
1-2 teaspoon Ben Hur nutmeg.
1-2 Teaspoon Ben Hur cinnamon.
1-2 cup nuts, coarsely chopped.
1 cup Iris raisins.
1 cup Iris currants.
grated orange rind.
1-4 cup Excelsior butter.
1-4 cup Sikppy Peanut Butter.
1-1-2 cups brown sugar.
2 tablespoons sour milk.
2 eggs, beaten well.
Method: Sift flour and measure, add soda, baking powder, nutmeg, and cinnamon, and sift together. Sift half of this mixture over fruits and nuts; mix well. Cream butter and Skippy thoroughly, add sugar gradually beating until light and fluffy. Then add milk and eggs. Beat well. Add sifted dry ingredients, and fruits and nuts. Beat until smooth. Drop from teaspoon on greased tins and bake in moderate oven (375F) 10 to 15 minutes.
MIXED VEGETABLE PLATTER SALAD
16 Iris asparagus tips.
1 No. 2 can Iris peas.
2 cups Iris diced carrots.
1 No. 2 can Iris baby beets (drained and dried).
1-2 cup diced celery.
1-2 cup diced sweet pickle or pickle relish.
chopped parsley.
diced Iris pimento.
chopped chives.
1-2 cup mayonnaise.
French dressing.
Lettuce, endive or water cress.
Method: Arrange lettuce cups on large salad plate or platter and radiate asparagus tips toward edge. In space between tips arrange a mound of carrots mixed with celery and chives, alternately.
Stuffing:
2 cups Weber's bread small pieces.
1 cup diced celery.
1 large onion.
1-4 cup chopped olive oil.
1-2 teaspoon Ben Hur seasoning.
Ben Hur pepper, paprika,
1 egg.
4 tablespoons Pompeian Oil.
1-4 - 1-2 cup water.
few drops Mellhennn sauce.
Method: Select a variety of spare ribs, or a part that one piece can be left other. Rub with salt and pile stuffing lightly. Prepare stuffing. Saute onion and celery until tender but not bread crumbs, and re-greedients except water enough water to moistenoughly, and mix. Cover mainting section of spice fasten together with sieve. Place in uncover pan. Bake in moderate degrees, for two hours.

SWEET POTATO CASSEROLE
4 - 6 sweet potatoes
1 cup brown sugar.
1-4 cup Excelsior lime
1-2 tablespoon vinegar marshmallows.
Method: Cook swiss until they are nearly pare and cut into slices inch thick. Butter a place potato slices in together brown sugar and spread over potato vinegar over all. Plate in moderate oven, 350 degrees and bake 30 minutes.oven and top with marshmallows. Return bake 10 minutes or or mallows are lightly br
CANTALOUPE a la PEACH MARLOW
20 marshmallows.
1 cup milk.
1 cup Iris peach (put through ricer)
1-3 cup Holly sugar.
few drops Ben Hur almond flavoring.
1 cup Excelsior whipping cream.
Method: Dissolve marshmallows in milk in top part of double broiler. Place in refrigerator tray and freeze until mushy. Whip cream, not too stiffly; pare peaches and run through ricer, and add sugar. Combine whipped cream, peach pulp and frozen milk and marshmallow mixture, and add flavoring. Beat until smooth. Return to refrigerator, freeze without stirring. Serve in small cantoloupe halves notched around edges. (Notched out pieces may be used for cocktail with orange juice)
LIGHTNING CUP CAKES
5 tablespoons Excelsior butter.
3-4 cup Holly sugar.
1 1/2 cups Ace-Hi Family flour.
1 teaspoon K.C. Baking Powder.
1 teaspoon Ben Hur Pastry Spice.
pinch of salt.
1-2 cup Excelsior milk.
1 egg.
1 teaspoon Ben Hur vanilla.
Method: Put shortening, sugar and egg in bowl and mix together. Sift and measure dry ingredients. Add alternately with milk and flavoring. Bake in little paper baking cups set in muffin pans at 350 F. for about 20 to 25 minutes, depending on size cups used.
QUICK FUDGE ICING
4 tbsp water.
4 tbsp Excelsior butter (½ cube).
Method: When butter is melted, pour in entire contents of package of Quick Fudge. Stir until glossy (3 or 4 minutes). Remove from heat and ice cake immediately.

FRENCH DRESSING
1 small can tomato soup.
1 cup vinegar (cider)
1 cup Pompeian Olive Oil.
1 tablespoon salt.
1-2 teaspoon Ben Hur pepper.
1 teaspoon Ben Hur paprika.
1 teaspoon A-1 Sauce.
1 clove garlic.
1 teaspoon Ben Hur mustard.
Put all ingredients into a bowl and beat with an egg beater. Store in refrigerator. This makes about one quart of dressing.
QUICK FUDGE—PLAIN
3½ tbsps. water.
1½ tbsps. butter.
Method: When butter is melted pour in entire contents of package of quick fudge. Cook 3 minutes stirring slowly. Remove from heat and pour in buttered pan or platter.
BEN HUR DRIP COFFEE
Drop a Ben Hur silk fibre filter-paper in the bottom of the coffee-maker. Measure in the specially prepared Ben Hur Drip Coffee. One heaping TEASPOON to each cup when more than four cups are made (an extra teaspoon may be needed if less is made). Insert the water spreader in its place. Pour in the required amount of boiling water. Place coffee maker over low heat. Never boil. In five to seven minutes the water will filter through.
SHORE DINNER ROLL
Standard Biscuit Recipes.
2 cups Ace-Hi Family Flour.
2 tps K.C. baking powder.
1 tsp salt.
4 tbsp shortening.
2/3 cup Excelsior milk.
Other ingredients.
1 egg.
1 can Shore Dinner.
Method: Sift flour, baking powder and salt. Cut in shortening until mixture has apporportion of drained and dried).
1-2 cup diced celery.
1-2 cup diced sweet pickle or pickle relish.

diced Iris pimento.
chopped chives.
1-2 cup mayonnaise.
French dressing.

JELLIED ASPARAGA
1 package lemon gel
1 can Iris asparagus
1-2 cup sliced green
1-2 cup celery shred
1-4 cup diced cookies
a few stuffed olives
1 tablespoon lemon juice
lettuce-mayonnaise.
Iris pimiento.

Method: Cream butter, add beaten egg, measure and sift to gredients. Add all mixture with raisin tain raisin juice, cow raisins with water minutes. Add chocolate lastly and vanilla. Pan on two layers for at 350 degrees F.
FUDGE ROCKY ROSE
4 teaspoons water.
4 tablespoons Excelsior

BROCHETTES OF LIVER, BACON AND MUSHROOMS
"A 25 Minute Grill for Four."
1 lb. calf's liver (cut ½ inch thick.
1-2 lb. bacon, sliced.
8 button mushroom caps.
2 zucchini squash.
2 tomatoes.
2 small head cauliflower.
Holly sugar.
Ben Hur pepper.
Pompeian olive oil.
Few drops McIlhenny's tobasco sauce.
Weber bread.
Method: Wipe liver with damp cloth, cut in 1¼ inch squares. Cut bacon in 2-inch lengths and skewer then alternate with pieces of liver and bacon until skewer is filled. Put a mushroom cap on end and place on broiler rack. Cut zucchini in half lengthwise, springle with salt, pepper, sugar and brush with olive oil. Cut tomatoes in halves, sprinkle with salt, pepper and sugar and dot with butter. Add 1 drop tobacco to each half tomato. Have cauliflower par-boiled in salted water. Season and brush with butter. Arrange vegetables on broiler rack with brochettes of liver. Place about 3 inches below heat. Turn occasionally and brush squash frequently with oil. If tomatoes are tender before liver, remove from rack and keep warm. Place slices of Weber bread over meat and toast to golden brown on both sides, cut in finger lengths and arrange on platter, placing brochettes on top of bread. Arrange vegetables around meat, garnish liver with chopped chives or small green onions.
SHORE DINNER ROLL

1 tsp salt.
4 tbsp shortening.
2/3 cup Excelsior milk.
Other ingredients.
1 egg.
1 can Shore Dinner.
Method: Sift flour, baking powder and salt. Cut in shortening until mixture has appearance of coarse corn meal. Add milk, working only enough to combine ingredients. Turn out on floured board; knead until smooth. Pat out in rectangular shape. Mix egg with Shore Dinner and spread over biscuit dough. Roll like a jelly roll, cut in inch pieces and bake in 400 deg. F. oven 10-12 minutes. Serve with white sauce or cheese sauce.
WHITE SAUCE
1 cup Excelsior milk.
2 tbsp. Ace-Hi flour.
½ tsp. salt.
3 tbsp.s. Excelsior butter.
Dash of Ben Hur white pepper.
Method: Melt the butter, stir in flour and seasonings, add cold milk, then cook until thick. This recipe makes a medium white sauce. Add ½ cup grated cheese to this recipe if cheese sauce is desired.

ROAST STUFFED SPARE RIBS
2 sections of pork spare ribs.
Stuffing:
2 cups Weber's bread pulled in small pieces.
1 cup diced celery.
1 large onion.
1-4 cup chopped olives.
1 teaspoon salt.
1-2 teaspoon Ben Hur poultry seasoning.
Ben Hur pepper, paprika.
1 egg.
4 tablespoons Pompeian Olive Oil.
1-4 - 1-2 cup water.
few drops McIlhenny's Tobasco sauce.
Method: Select a whole piece of spare ribs, or a part of two, so that one piece can be laid over the other. Rub with salt and pepper and pile stuffing lightly on center. Prepare stuffing as follows: Saute onion and celery in olive oil until tender but not brown, add bread crumbs, and remaining ingredients except water. Add just enough water to moisten thoroughly, and mix. Cover with remaining section of spareribs, and fasten together with skewers and tie. Place in uncovered roasting pan. Bake in moderate oven 350 degrees, for two hours.
Gravy: When ready to serve remove roast ribs to hot platter, add few drops of Kitchen Bouquet and enough water to pan for gravy. Thicken to desired consistency with flour and water in equal amounts made into paste. Cook.
SWEET POTATOES en CASSEROLE
4 - 6 sweet potatoes.
1 cup brown sugar.
1-4 cup Excelsior butter.
1-2 tablespoon vinegar, marshmallows.
Method: Cook sweet potatoes until they are nearly tender. Cool pare and cut into slices about 1-2 inch thick. Butter a casserole and place potato slices in it. Cream together brown sugar and butter, and spread over potatoes. Pour vinegar over all. Place casserole in moderate oven, 350 degrees-m and bake 30 minutes. Take from oven and top with border of marshmallows. Return to oven and bake 10 minutes or until marshmallows are lightly browned.
2 tablespoons Holly sugar.
1 package Vegeroni.
Method: Put oil in frying pan and brown garlic and meat in it. Then add pepper, onion, celery, tomatoes and seasonings. Cover and cook fast until steaming. Stir mixture, and sprinkle Vegeroni-Spaghetti over top. Do not stir after adding Vegeroni-Spaghetti. Cover, turn heat to low and cook without removing cover 45 minutes.
TUNA PIE WITH CHEESE PINWHEELS
3 tablespoons Pompeian Olive oil.
1-2 cup diced green pepper.
1-4 cup diced onion.
1-4 cup diced celery.
6 tablespoons Ace-Hi Family flour.
1-2 teaspoon salt.
dash Ben Hur pepper.
garlic, celery, and onion salt.
3 cups milk.
1 large or 2 medium cans Iris tuna fish.
1 tablespoon lemon juice.
Method: Fry onion, celery, and green pepper in oil until tender. Add flour, seaasonings and milk to make medium cream sauce. Add tuna and lemon juice. Put in baking dish or ramekins and top with cheese pinwheels.
CHEESE PINWHEELS
1-2 cups Ace-Hi Family Flour.
1-2 teaspoons K. C. baking powder.
1-2 teaspoon salt.
3 tablespoons shortening.
1-2 cup milk plus 1-4 teaspoon A-1 sauce.
3-4 cup shredded American cheese.
2 chopped Iris pomientes.
Method: Sift and measure flour. Sift dry ingredients together, cut in shortening. Add milk. Toss on floured board and roll to 8 x 12 in. rectangle, about 3-8 inch thick. Spread with cheese and pimento. Roll like a jelly roll. Cut in 8 slices, flatten slightly. Put in tuna pie, cut side up. Bake 30 minutes at 40 degrees.
Date and Peanut Butter Treats
2 tablespoons Excelsior butter.
½ teaspoon salt.
1 tablespoon diced onion.
1 tablespoon diced green peper.
2 drop McIlhenny's tabasco sauce.
1 tablespoon chopped pimiento.
Method: Saute onion, green pepper and pimento in butter until tender, add flour. Then add milk, stirring constantly, until thick and smooth. Add remaining ingredients, and beat thoroughly.

Frankfurter Ring, with Deviled Vegeroni.

FRANKFURTER RING, with DEVILED VEGERONI
1-2 lbs. frankfurters (12 frankfurters)
4 slices bacon.
2 tablespoons Pompeian Olive Oil.
Method: Stand frankfurters upright, and using 2 toothpicks for each, arrange in a ring. Wrap the bacon around the outside of the ring and secure with same toothpicks. Rub frankfurters with oil. Put in a shallow pan. Bake 15 minutes or until bacon is brown. Serve with center filled with Devilled Vegeroni.
DEVILED VEGERONI
1-3 cup Vegeroni.
6 cups boiling water.
1-2 teaspoons salt.
Cook vegeroni in salted water until tender.

Method: Seal crumbs and butter eggs, salmon whitened, salt, pimient parsley and A-1 oiled custard cup ter at 350 degrees Serve with mushrooms.

Method: Saute pepper and pimient til tender, add milk, stirring thick and smooth ingredients, and serve with mushrooms.
PUMPKIN CUP
Pastry: New York dough.
2 cups Ace-Hi
1-2 cup shortened lespoons

Method: Sift dry ingredients
JELLIED ASPARAGUS SALAD
1 package lemon gelatine.
1 can Iris asparagus tips.
1-2 cup sliced green pepper.
1-2 cup celery shredded.
1-4 cup diced cooked carrots.
a few stuffed olives, sliced.
1 tablespoon lemon juice
1 teaspoon onion juice,
salt.
lettuce-mayonnaise.
Iris pimiento.
Method: Dissolve lemon flavored gelatine in 1 cup hot water, and add 1 cup juice from asparagus. Let cool until slightly thickened. Arrange asparagus tips around edge of fluted molds, allowing 3 to 5 to a salad, with tip ends down. Lay sliced stuffed olive on bottom of mold. Combine remaining vegetables, onion juice and salt, and add to gelatine mixture. Fill molds, and place in refrigerator to set. Serve unmolded on crisp lettuce cups, garnished with mayonnaise and pimiento strips.
RAISIN SPICED CAKE
1-2 Excelsior butter.
1 cup Holly sugar.
1 egg.
1 cup chopped Iris raisins.
3-4 cup juice from raisins.
2 cups Ace-Hi Family Flour.
2 teaspoons K. C. Baking powder.
2 teaspoons Ben Hur Pastry Spice.
1 teaspoon Ben Hur vanilla.
Few drops Ben Hur almond flavoring.
Method: Cream butter and sugar, add beaten egg. Sift flour, measure and sift together dry ingredients. Add alternately to mixture with raisin juice. To obtain raisin juice, cover 1 cup of raisins with water and boil 20 minutes. Add chopped raisins lastly and vanilla. Bake in sheet pan on two layers for 30 minutes at 350 degrees F.

Method: When butter is melted, pour in entire contents of package of Quick Fudge. Stir slowly until glossy (3 or 4 minutes).

Bacon around the outside of the ring and secure with same toothpicks. Rub frankfurters with oil. Put in a shallow pan. Bake 15 minutes or until bacon is brown. Serve with center filled with Deviled Vegeroni.

1 1-3 cup Vegeroni.
6 cups boiling water.
1 1-2 teaspoons salt.
Cook vegeroni in salted water until tender.
1 1-2 cups Iris tomatoes.
1 teaspoon salt.
dash Ben Hur pepper.
1 tablespoon grated onion.
1-4 cup Ace-Hi Family flour.
1-4 cup water.
1 cup grated cheese.
Few drops McIlhenny's tabasco sauce.
Method: Put tomatoes, salt, peper and grated onion in saucepan. Mix together flour and water to a

Method: Scald milk and add crumbs and butter to milk; add eggs, salmon which has been flaked, salt, pimento, onion juice, and parsley. Bake in oiled custard cups in a pan of water at 350 degrees for 30 minutes. Serve with mushroom sauce.

1 cup Excelsior milk.
2 tablespoons Ace-Hi flour.

SALMON CUSTARD MOLDS
4 eggs, beaten slightly.
2 cups Excelsior milk.
1 cup Weber bread crumbs.
1-2 teaspoon salt.
1-3 can Iris pimiento.
Ben Hur paprika.
1 lb. can Iris salmon.
2 tablespoons Excelsior butter.
onion juice or scraped onion.
2 tablespoons parsley.
1-2 teaspoon A-1 sauce.
Method: Scald milk and add crumbs and butter to milk; add eggs, salmon which has been flaked, salt, pimiento, onion juice, parsley and A-1 Sauce. Bake in oilied custard cups in a pan of water at 350 degrees for 30 minutes. Serve with mushroom sauce.
MUSHROOM SAUCE
1 cup Excelsior milk.
2 tablespoons Ace-Hi Family flour.
1 4-oz. can mushrooms.
2 tablespoons Excelsior butter.
1-2 teaspoon salt.
1 tablespoon diced onion.
1 tablespoon diced green pepper.
1 tablespoon Iris chopped pimento.
Method: Saute onion, green pepper and pimento in butter until tender, add flour. Then add milk, stirring constantly, until thick and smooth. Add remaining ingredients, and heat thoroughly.
PUMPKIN CHIFFON PIE
Pastry: New Hot Water Method.
2 cups Ace-Hi Family Flour.
1-2 cup shortening plus 2 tablespoons.
1-2 teaspoon K. C. baking powder.
1 teaspoon salt.
1 tablespoon lemon juice or vinegar.
1-3 cup boiling water.
Method: Sift and measure flour. Sift dry ingredients together. Cut into smooth paste and add to tomato mixture. Boil two minutes, stirring constantly. Add vegeroni and grated cheese. Cook slowly until cheese is melted. Serve at once in center of Frankfurter Ring.

1-2 cup Excelsior milk.
1 tablespoon gelatin.
1-2 cup cold water.
3 teaspoons Ben Hur Pastry Spice.
1-2 teaspoon salt.
3 egg whites.
Method: Mix all together and cook in double boiler until thick (except egg whites and gelatin). When thick, add gelatine which has been soaked in 1-2 cup cold water. Beat and cool. When mixture begins to congeal fold in beaten egg whites to which 4 table-spoons sugar have been added.
APPLE CRISPI PIE
—Pastry for -one-crust pie—
4 - 5 tart apples.
1 cup Holly sugar pinch salt.
1-2 teaspoon cinnamon.
few drops Ben Hur vanilla.
Crumb:
4 tablespoons Excelsior butter.
4 tablespoons Ace-Hi Family Flour.
1-2 cup brown sugar.
Method: Line deep pie pan with pastry and flute the edge. Peel and slice apples, add sugar, salt, vanilla and cinnamon, and place in unbaked pie shell. Mix butter, flour and sugar together until very crumbly. Pat firmly over top of apples. Bake at 450 degrees for 15 minutes, then reduce heat to 350 degrees, and bake about 30 minutes longer, or until apples are tender.
DRIED BEEF RAREBIT
4 tablespoons Pompeian Olive Oil.
4 tablespoons Ace-Hi Family Flour.
2 cups Excelsior milk.
1 (4 oz.) jar dried beef, shredded.
1-4 teaspoon Ben Hur mustard.dry.
1 teaspoon A-1 Sauce.
pinch Ben Hur cayenne.
1 cup grated cheese.
Toasted Weber bread cases or slices of bread.
Method: Put the oil in a pan and stir in the flour. When smooth, add the milk gradually, stirring.

Bread (very fresh)
1 cup Skippy Peanut Butter India rellish
Method I: Trim crusts from slices of Weber bread, spread peanut butter and relish, tightly, wrap in damp tea Pack in refrigerator until to use. Method II: Cut long slices from unsliced bread, trivaults. Spread with peanut b mix roll like jelly roll, warm damp cloth and place in refrigerator until ready to serve. Read and slice in pinwheels.

Pastry: New Hot Water Method.
2 cups Ace-Hi Family Flour.
1-2 cup shortening plus 2 tablespoons.
1-2 teaspoon K. C. baking powder.
1 teaspoon salt.
1 tablespoon lemon juice or vinegar.
1-3 cup boiling water.
Method: Sift and measure flour. Sift dry ingredients together. Cut in shortening. Add lemon juice to boiling water. Add to flour and shortening mixture gradually. Cool pastry. Roll, using very little flour on board.

1 1/2 cups Iris pumpkin.
4 tablespoons Ace-Hi Family Flour.
2 cups Excelsior milk.
1 (4 oz.) jar dried beef, shredded.
1-4 teaspoon Ben Hur mustard, dry.
1 teaspoon A-1 Sauce.
pinch Ben Hur cayenne.
1 cup grated cheese.
Toasted Weber bread cases or slices of bread.
Method: Put the oil in a pan and stir in the flour. When smooth, add the milk gradually, stirring constantly, then the shredded dried beef, mustard, A-1 sauce, and pepper. Cook until creamy, stir in the grated cheese, remove from the fire and stir until smooth and the cheese is melted. Serve immediately on buttered toast or in bread cases. Six servings.
