Jelly “Weeping” Habit Explained
Jelly-makers’ Questions On Crystals, Mold and Fermenting Answered
“What causes sugar crystals in jelly?” This is a question constantly asked the bureau of home economics of the U. S. department of agriculture. Crystals may be from number of causes. They may result, says the bureau, from an excess of sugar, from overcooking, lack of sufficient acid in the fruit, or from allowing the jelly to stand too long before sealing.
Crystals in grape jelly from cultivated grapes are not sugar but crystals of cream of tartar (potassium acid tartrate). One way of avoiding them somewhat is to allow the juice to stand overnight, then siphon it off or strain it. Another way is to can the juice and allow it to stand for some time before making into jelly. Or combine it with other fruit juices.
“Why does some jelly ‘weep’ or run as soon as it is cut?” “Weeping” occurs in jellies made from very acid fruits. It is especially noticeable with cranberry and current jelly. When making jellies from these fruits use small glasses that hold just enough for one meal.
“Does mold on jelly make it unfit for use? What causes it?” Mold may grow on jellies when the paraffin layer has become loosened, or in jellies which have oozed, or jellies stored in a hot damp place. If mold is growing on the top of the paraffin it is not likely to affect the jelly. But if mold grows beneath the paraffin, the flavor of the jelly may be impaired. Sometimes it can be scraped off and the rest of the jelly used.
“What causes jelly to ferment?” Fermentation of jelly is caused by yeast or bacteria. Steps to safeguard against fermentation are the use of new paraffin each year, the use of sterilized jelly glasses, protection of the jelly from contamination before sealing.
Ortega Highway Nearly Complete
The Ortega Highway which extends from San Juan Capistrano to Lake Elsinore has been completed, with the exception of a bridge across San Juan creek. This is 2 miles east of San Juan Capistrano, and a short detour of about one eighth of a mile is necessary around the bridge.
The highway is paved for a distance of one mile east of San Juan Capistrano, and the balance is gravel and dirt, with wide sweeping curves and gradual grades. At present the road is dusty and slightly corduroyed. All of the slides have been removed.

Expert Warns of Botulinus Poisoning From Home-Canning; Lauds Drying
Warning of the danger of botulinus poisoning, Dr. W. V. Cruess advises the drying of vegetables at home, rather than canning. Dr. Cruess, who is associate professor of fruit products in the college of agriculture, says:
“Owing to the difficulty of properly sterilizing home-canned non-acid vegetables in the home because of the lack of proper facilities, housewives are advised by the fruit products laboratory to dry such vegetables as string beans, peas, corn, spinach, and okra. Tomatoes and rhubarb, however, owing to their acidity, are easily sterilized in the home in boiling water. The non-acid vegetables require steam under pressure in a steam pressure cooker, a utensil lacking in most homes.

While vegetables may be dried in the sun, the quality of the dried product is much better if the vegetables are dried in the home-size evaporator. The evaporator is easily made from scrap lumber available on any farm. Heat

Farm Machinery Exhibits Drawing Interest at Fair
Million-Dollar Display Will Show Latest Tools for Convenience of Farmers
Farm machinery manufacturers are banking on the agricultural recovery of California.
To the tune of nearly one million dollars, they are sending exhibits to the California state fair which opens in Sacramento September 2. Not since the opening of the great Arcade farm machinery building has such a variety of displays been assembled. Mining machinery and other non-agricultural exhibits formerly shown in the pavilion will this year have to take other quarters.
Working with the division of agricultural engineering of the college of agriculture of the University of California, the implement industry will this year present a full line of farm tools particularly adapted to California conditions and crops.
The farmer who has struggled with the mowing of tangled vetch hay will find a whole series of special fingers, guards and attachments for use on regular commercial mowers.
New equipment for the spraying, dusting and washing of fruit will show the orchardist how to overcome the problem of spray residue on fruits.
A large section of the machinery building will be given over to gasoline and electric pumping equipment, which will be operating about the pool in the central court. Reflecting the growing interest during the year in internal combustion units, many new models will be shown, ranging from the small "stove top" engine up to the large to dry such vegetables as string beans, peas, corn, spinach, and okra. Tomatoes and rhubarb, however, owing to their acidity, are easily sterilized in the home in boiling water. The entire dish outlay for an evaporator has often been less than two dollars. There is absolutely no danger from botulinus poisoning from home dried vegetables, whereas home canned string beans and certain other home canned non-acid vegetables have in the past caused fatal poisoning."

In the leaflet directions are given also for the home drying of fruits and the preparation of candied fruits. The home canning of fruits and vegetables is described, in Circular 276, which also will be sent free on application.
Most Car Crashes In Late Afternoon
Survey Reveals Most Fatalities During Night; Carelessness Blamed
The period when traffic accidents are most frequent is late afternoon, particularly from five to six o'clock, according to an analysis of records in a study received by the public safety department. The basis of this finding is a study of 740,000 accidents that occurred throughout the United States last year. The point is made that the hour mentioned is one of heavy traffic, especially in cities, and also that fatigue of motorists driving homeward after the day's work is a probable factor.
It is brought out by statisticians, and may appear surprising, that more than 10 per cent of all traffic deaths, and in excess of seven per cent of the injuries, result from accidents that occur between one and six in the morning. Traffic being light during these hours, the conclusion is reached that reckless driving is one of the

Diesel tractors, shown by a single manufacturer last year in the "seventy-five" model, will be shown this year by several of the large houses.
Factory engineers, service specialists and other representatives will be present in larger numbers than for the past five years, according to W. V. Freeman, secretary of the Tractor and Implement Club of California, which is arranging the display.
Urges Growers to Think About Seed
Grain growers will soon find it time to acquire their seed for fall and winter planting according to Assistant Farm Advisor W. M. Cory. It is always desirable to locate and reserve a supply of good seed and that should be done well in advance of planting time.
A tentative list of pure seed growers has been prepared by the agronomy extension specialist, Earl Coke. This includes growers of approved seed of barley, wheat, oats, and grain sorghum. Among the barley varieties there are listed Atlas, Club Mariout, Vaughan, and Hero. Atlas barley is a brewing barley. Hero is an improved feed barley for southern California. Wheat varieties include Escondido, Baart, Sonoma, and White Federation. Escondido wheat is recommended for Orange county. Two growers of Kanota Oats are listed and one grower of double Dwarf Milo.
The list is available to those who are interested in the acquiring of pure seed.
Beer Imports In July Slackened
California's import of beer slacked off during July, with a resultant decrease in the tax for July compared with June, the state board of equalization announces.
The tax last month amounted to $70,899, representing sale of 3,544,993 gallons. In June the tax was $72,012, a gallonage of 3,600,629 being reported by distributors that month.
Although sale of California brewed beer shows a steady increase each month, imports fell off heavily in July, the board reported. Locally brewed beer increased from 2,512,723 gallons in April to 3,215,998 gallons in July. Beer brewed in California accounted for 90 per cent of the total sold in the state in July, the statement of the board said.
