Savory Fish Cut into strips one pound of smoked fish of any kind; put over fire in cold water, let come slowly to a boil, and boil for ten minutes. In another saucepan heat one cup of stock with one-fourth a cup of each, of tomato sauce and vinegar, a tablespoon of made mustard, and a few grains of cayenne. Drain the fish, saute on hot pan in one-fourth a cup of butter or fat, then add to the hot stock; thicken the butter in the pan with two tablespoons of flour; stir this into the saucepan containing the fish and seasoned stock, cover, and simmer for five minutes. Serve on a hot platter, surrounding with strips of toast. Be sure to keep a piece of waxed paper over the cut surface of a melon or cantaloupe to prevent the odor from spoiling other food.
