IN THE DAYS OF LONG AGO
Items of Local Interest Culled from the Files of Former Issues of This Paper
50 YEARS AGO THIS WEEK
On Tuesday last a social convention was held at the grand ranch of Ashcroft & Pryor, at San Juan Capistrano, and at which Santa Margarita, San Luis Rey, Las Flores and Anaheim were represented by appropriate delegations, young and old, male and female. Preparation were made upon a magnificent scale, and the gathering of the parties at noon was the chief signal for the beginning of a good time, which ended not until fourteen hours later. At night there gathered beneath the hospitable roof of Senor Don Juan Abila a fine array of the beauty and aristocracy of the lower country, including the beautiful young lady from Santa Margarita whose name we have forgotten. Dancing—with native American and Spanish—was the order of the occasion, and it was late ere the guests departed for their homes. The next day the festivities were transferred to the residence of Senor Don Juan Forster at Santa Margarita, thirty miles below, and we judge from numerous telegraph dispatches received from that place, that they are still being continued—and long may they continue.
At Westminster the grasshoppers are thinning out their ranks very fast, not more than a fifth part remaining, and we trust they will soon be gone. Mr. Colson had everything taken by them that was up, and has been, and still is replanting. He has let water
Max Nebelung is in receipt of a letter from Mr. Finck, uncle of his wife, who resides in St. Louis, detailing the losses sustained in the recent cyclone. Mr. Finck's residence was partly burned down, entailing a loss of some three thousand dollars. Henry T. Finck, the well known New York newspaper man, son of the gentleman referred to, had been visiting in St. Louis with his wife, but took his departure for the east the morning of the storm. He could see the storm coming from the car window, and afterward learned that the room which he occupied in his father's house had been demolished by the storm.
Miss Kate Rea, daughter of J. B. Rea, who arrived with her family yesterday from San Diego, and who graduated at the recent commencement exercises at the San Diego high school, has the honor of standing the highest of any scholar in the school during a period of four years. She will lattend school at Stanford, but her health having been taxed during her studies of the past term, she may remain in Anaheim for a year before taking up her studies again.
The yearly readjustment of postofficearies leaves that of our worthy postmaster just what it was last year—$1300—the increase in the business of the year being a few dollars inside the amount necessary for a raise.
At Westminster the grasshoppers are thinning out their ranks very fast, not more than a fifth part remaining, and we trust they will soon be gone. Mr. Colson had everything taken by them that was up, and has been, and still is replanting. He has let water enough run to waste to have irrigated at least one hundred and sixty acres.
The public school at Santa Ana is closed for the vacation. The pupils have gained great proficiency under the charge of Miss Anna Casad, the teacher.
John Hanna informs us that 4000 sacks of wheat and barley have been threshed at San Luis Rey.
Deery, the ex-champion billiardist of America, will be in Anaheim today, and this evening will give an exhibition of his skill at the Enterprise saloon.
An active exertion is being made to raise enough money by subscription to purchase a fire alarm bell for Anaheim.
The new dwelling house of Phil Davis & Bro., now being constructed on the site of the building lately burned on Center street, is to be two stories in height, and in other dimensions 50 by 75 feet. It is to be of the composite cottage style of architecture, and intended to eclipse in beauty and convenience the building lately destroyed by fire.
The grapes in the vineyards at Anaheim are now above the size of hazelnuts, and where not infested with grasshoppers, have a very healthy appearance.
Quite a shower of rain fell in Anaheim yesterday.

Prof. Frantz and Frank Eastman have returned from their circus trip, having forsaken the glamors of that sort of existence. The Professor is of the unalterable conviction that traveling with the circus is not all that it’s cracked up to be. He jumped the show at Denver, after a period of luminous redfire exhibition stretching from San Bernardino across Arizona and New Mexico and to the Colorado capital. He disposed of the ostriches for $200, and will in the future content himself with settling down to the humdrum of every day existence. The professor will take back his barber shop, and will abandon ostrich training. He didn’t make a mint of money while away, but he got a whole lot of experience, which will be valuable to him in his future spans with r

Anaheim is unusually quite. No drunks, fights or robberies—not even a fire during the week.
On Thursday last the city council met in extra session at the call of the mayor to decide as to what license should be paid for the current quarter—whether the old rate or upon the new schedule. It was decided that the old license should be paid, as the ordinance modifying it could not take effect for a period prior to its passage.
The editor of this paper accepts the polite invitation of the people of Santa Ana to deliver the 4th of July oration at that place.
Pies James is said to be about to start a five cent restaurant in Los Angeles, together with a 5 cent lodging house. One of the five cent restaurants in that city feeds as many as 2700 people daily, so it is said, and the proprietor's profits amount to upward of $350 per month. A substantial meal is given, consisting of a plate of soup, a piece of meat, bread and potatoes. For breakfast the bill of fare is a piece of bread, one boiled egg and a cup of coffee. Our informant tells us one would be surprised o see the apparently well-do class of people who frequent these cheap eating houses.
Julian Berdugo, the Mexican murderer, was sentenced on Friday in the superior court at Santa Ana to fifteen years in state prison. Deputy Sheriff Ulm left with him immediately after the sentence for San Quentin.
RICHFIELD-OLIVE BRIDGE
Contractors are preparing their bids for the building of a new bridge across the Santa Ana river between Olive and Richfield.
These bids will be opened by the board of supervisors July 12, and work upon construction will be started with as little delay as possible, as it is desired that the bridge be completed before the rainy season arrives.
Tuesday the supervisors set a date for receiving bids for the construction of a bridge across the Santa Ana river on West Seventeenth street, Santa Ana.
The plans for the Richfield-Olive bridge, as prepared by County Engineer J. L. McBride and as submitted to the contractors for bids, calls for a bridge with fifteen 50-foot spans across the main portion of the river bed.
Reinforced concrete piles will be used, the superstructure to be of wood. The approaches to the bridge will be of pile trestle. The trestle approach on the south side will be 160 feet in length and on the north side 148 feet.
The trestle was chosen for the approaches for two reasons, one being that it is cheaper than a dirt fill and the other that in case of overflow from the river the water may pass through instead of backing up against the fill.
McBride's plans for the Seventeenth street bridge call for eight 50-foot spans with reinforced concrete piles. A trestle approach will be used on each side.

SALADS FOR THOSE
WHO LIKE CHEESE
Cheese often makes a delicious addition to a salad. The following recipes for salads in which cheese plays an important part are recommended by food specialists in the United States department of agriculture:
Cheese Jelly Salad
1-2 cup grated cheese.
1 tablespoon gelatin.
1 cup whipped cream.
Salt and pepper to taste.
Mix the cheese with the whipped cream, season to taste with salt and pepper, and add to the gelatin dissolved in a scant cup of water. This may be molded in either large or small molds. When the jelly begins to harden, cover with grated cheese. The jelly should be served on a lettuce leaf, preferably with a cream or French dressing to which a little grated cheese has been added.
Cheese and Pimiento Salad
Stuff canned pimientos with cream cheese, cut into slices, and serve one or two slices to each person on lettuce leaves with French dressing.
Cheese and Tomato Salad
Stuff cold tomatoes with cream cheese and serve on lettuce leaves with French dressing.
Cheese Salad and Preserves
Epicureus have devised a dish which consists of lettuce and French dressing served with cream cheese and thick preparations of currants or other fruits preserved in honey or sugar. Owing to the fact that the seeds have been extracted by a laborious process, these fruit preparations are fairly expensive. The soft cheese often found in market is also relatively expensive. There is a suggestion in this dish, however, for others which are much less costly. Ordinary cottage cheese served with lettuce or other green salad and a small amount of rich homemade preserves, is a combination with much the same character, and very appetizing.
Deviled Eggs With Cheese
In making deviled eggs, either to be eaten alone or upon lettuce leaves in the form of salad, a little grated cheese may be mixed with the yolks in addition to the usual salad dressing and flavorings.
Plain Cheese Salad
Cut cheese into thin pieces, scatter them over lettuce leaves, and serve

DEVILED EGGS WITH CHEESE
In making deviled eggs, either to be eaten alone or upon lettuce leaves in the form of salad, a little grated cheese may be mixed with the yolks in addition to the usual salad dressing and flavorings.
PLAIN CHEESE SALAD
Cut cheese into thin pieces, scatter them over lettuce leaves, and serve with French dressing.
Olive and Pimiento Cheese
Mash any of the soft cream cheeses and add chopped olives and pimientos in equal parts. This mixture requires much salt to make it palatable, the amount depending chiefly on the quantity of pimientos use. The mixture may be spread between slices of bread or it may be made into a roll or molded, cut into slices, and served on lettuce leaves with French dressing.
Cheese balls are often served with salad. They are made of soft cream cheese, and are frequently combined with chopped chives, olives, sweet peppers, and nuts. Cooked egg yolk, spinach extract, etc., are sometimes mixed in for the sake of color. If the balls are rolled in chopped chives or parsley, both flavor and color are supplied.
POT AND KETTLE
