CORN MEAL IN APPETIZING WAYS Most persons who eat a noontime dinner like at least one hot, hearty dish for supper. Those made largely of corn meal are not only nourishing but very appetizing as well, when made by a skillful cook. When mush is called for in a recipe the following method of preparing it, recommended by the Experimental kitchen of the United States Department of Agriculture, is easier and better than the usual way—that of bringing the water to a boiling point and then stirring the meal into it: ... Lumpless Corn-Meal Mush ... Put the corn meal, cold water and salt together in the top of a double boiler. No stirring is necessary. Put the top of the double boiler into the lower part and allow the mush to heat slowly, cooking half an hour, or longer, if convenient. Many persons cook it for four hours. Just before serving remove the top of the double boiler from the lower part, and boil the mush for two or three minutes. In boiling it at this time there is no danger that it will lump, and this extra cooking improves the texture and the flavor. ... Corn-Meal Fish Balls 2 cups cold white corn-meal musn 1 cup shredded codfish 1 egg and 1 tablespoon butter. Pick over the codfish and soak it to remove salt, if necessary. Combine the ingredients and drop by spoonfuls into hot fat. Drain. These codfish balls compare very favorably in taste with those made with potato, and are more easily and quickly prepared. The mush must be dry as possible. This makes 12 fish balls. Corn-Meal Mush With Pork 1 pound lean pork, part meat and part bone. 1 cup corn meal. 1-2 pound cheese. Into the salted boiling water pour or sift the corn meal slowly, stirring constantly and allow to boil for 10 minutes, then add most of the cheese and cook for 10 minutes more, or until the cheese is melted. Add the milk, and cook for a few minutes. Pour into a greased baking dish, and brown in the oven. This is improved by grating a little hard cheese over the top just before it is baked. Serve hot or when cold it may be cut into slices and fried. This serves four or six persons. CHEESE GIVES DISHES FLAVOR AND RICHNESS In cheese sweets, flavor and richness are both contributed by the cheese. The Office of Home Economics of the United States Department of Agriculture recommends the following recipes in which cheese is a prominent ingredient: ... Cheese .Gingerbread ... 1 cup molasses 4 ounces of cheese 1 teaspoon of soda. 1-2 cup of water 2 cups of flour 2 teaspoons of ginger. 1-2 teaspoon salt Heat the molasses and cheese in a double boiler until the cheese is melted, add the soda and stir vigorously. Mix and sift dry ingredients and add them to the molasses and cheese alternately with the water. Bake for 15 minutes in small buttered tins. Cheese Relish Spread bread which has been toasted or fried in deep fat with grated cheese mixed with a little mustard, then heat in the oven until the cheese is melted. This may be served with salad, or as a relish to give flavor to some dish such as boiled rice or home-poured over the molasses being sifted pudding dish full. Reduce the broth to about a quart, or add enough water to bring it to this amount and cook the corn meal in it. Add the meat finely chopped and the seasoning. Pack in granite bread tins. Cut into slices and fry. Beef may be used in the same way. This serves six people. Cheese Pudding 1 quart boiling water 1 tablespoon salt. 1-2 cup milk. 1-2 pound yellow corn meal. Spread bread which has been toasted or fried in deep fat with grated cheese mixed with a little mustard, then heat in the oven until the cheese is melted. This may be served with salad, or as a relish to give flavor to some dish such as boiled rice or hominy, which has no very marked flavor. Brown Betty With Cheese Arrange in a deep earthenware baking dish, alternate layers of bread crumbs and thinly sliced apples. Season with cinnamon, also a little clove if desired and brown sugar. Scatter some finely shaved mild fallcream cheese over each layer of the apple. When the dish is full, scatter bread crumbs over the top and bake 30 to 45 minutes, placing the dish in a pan of hot water so the pudding will not burn. Cheese may be used in place of butter in a similar way in other apple puddings. Apple pie made with a layer of finely shaved cheese over the seasoned apples and baked in the usual way is liked by many people who are fond of cheese served with apple pie. CORN CHOWDER MADE FROM SALTED OR FERMENTED CORN Some fermented or salted vegetables like cucumbers, are eaten raw; others like cabbage (sauerkraut), are usually cooked. In general the fermented flavor from the fermented corn. After soaking, place the corn in cold water and salted products may be prepared for the table in much the same manner as the fresh vegetables, except that before being cooked they should be soaked in fresh water for several hours or longer, if necessary, to remove the salt, the water being changed several times. In some cases it may be necessary also to change the water once or twice during the boiling of the salted vegetables. In this one should be guided by taste. To prepare the fermented or salted corn for the table, rinse it thoroughly and soak for three or four hours, changing the water frequently. In general it will be found more satisfactory to remove practically all the acid and bring to a boil again, and cook until tender. The cooked salted or fermented corn may be used in many ways. The following recipe for corn chowder is recommended by household specialists of the United States Department of Agriculture: Corn Chowder 3-4 pound cold beef, or 1-2 pound of salt pork or seafood, Angeles when a jury in Judge Houser’s court found Emil Spitzer, former president of the Pacific Toy Company of Arizona, guilty of selling stock without a permit from the Commissioner of Corporation. Spitzer sold 425 shares of the capital stock of Pacific Toy Company to P. H. Joyce at par, $10 per share. Pacific Toy Company is an Arizona corporation. It has never applied for or obtained from the Commissioner of Corporations authority to sell its securities in this state and Spitzer had not been given permission to make such sales under a broker's or agent's license. Spitzer contended that the stock which he sold was his personal property and that he had a right to market his private holdings without a permit. In the trial Deputy District Attorney Clark of Los Angeles, who prosecuted the case, maintained that it was the stock of the corporation which was sold by Spitzed. In commenting upon this conviction Commissioner of Corporations E. C. Bellows said: “This is the first time that the Corporation Department has directed a prosecution against a violator of the Corporate Securities Act. Hitherto there has been some question among certain attorneys as to the constitutionality of the Act and a few of them have displayed confidence in the idea that the Commissioner would not enforce it. “This department will not daily with fly-by-night sellers of stock who attempt to make the State of California their dumping ground for worthless or unauthorized securities. “There are many persons in this State who are continually preying upon the credulity of people who come into a little money and who in seeking safe investments, are stock of some company organized in some other state which has not complied with the laws of the State of California. “The Spitzer case was the first time this department has acted in court, but it will not be the last. Make a sponge of all the ingredients except the rolled oats, and let it rise in a warm place until very light. Add the rolled oats, which have been ground fine in a food chopper and measured after grinding. Let the dough rise until it doubles in bulk, then knead and mould into a loaf brush with melted butter after it has been placed in a pan, and allow it to double in bulk again. Bake in a hot oven for 1 1-4 hours. M. of Thursday, the 14th day of April, 1921, for the furnishing to said City of Anaheim, of the following described cast Iron Water Pipe and fittings, to-wit: - 160 ft. of 6 inch cast iron water pipe and 3072 ft. of 4 inch cast iron water pipe; also the following fittings, to-wit: - 4 inch crosses, Bells all around. - 4 inch by 4 inch by 6 inch tones, Bells all around. - 4 inch sleeves. - 1-inch by 6 inch reducer, with 4 inch bell end, and 6 inch spigot end.
