CELESTIAL FEAST. WESTERN BARBARIANS AT NEW YORK'S CHINESE "DELMORICO." A Marvellous Army of Creoley—Cape of Delightful Tern—The Famous Dutch Nest—Ornate Art in Cooking Eggs. The party numbered a novelist, a journalist and a poet and two ladies, likewise literary look more or less known to the world. The time was 8 o'clock on a rainy night and the place was the Chinese quarter of New York, better known as the Band, where Mott street adjoined into Park row. Flicking their way among the pools and fills of the narrow sidewalk, the party halted before an ancient tenement, somewhat more dilapidated than its neighbors, whose door post bore a legend in China—if one could but have disheaped it—informing the history wayfair that here he might ask and be filled. The novelist, to whom experience in Chinese cookery the rest of the party humbly submitted themselves, led the way into the darky interior. Mounting one flight of stairs, he unraveled his companions into a large square, front room, uncarpeted, and furnished with a number of plaid wooden tables and stools. Near a window in one corner of the room one of the tables was set forth with a number of curious dishes. Here the party seated them all, and prepared for what was to follow. A MARVELIOUS ARRAY. Two chicks and a stove, together with the tables and stocks, were the only strictly Occidental appurtenances which the room contained. In the left hand corner of the apartment stood a ford, short lounge or divan, piled high with pillows, and furnished with a tray containing a miscellaneous arrangement of snails, jars, pipes and a lamp which was most constantly burning. It was compelled at present by a large plump specimen of the Oriental who lay at length lazily manipulating needle and pipe, and recently the taint, malodor odor of opium circulated through the place. In the opposite corner upon a number of chickens was arranged a marvelous array of crockery, calculated to set a keramomanian wild. Wonderful turens, decorated with intertwined dragons, makes, dwarfed foliage and monstrous humanity, bowls of all shapes and sizes, jars, pots, saucers and utensils whose use would puzzle any but a Chinese, were displayed to the admiration of envious eyes. Below these again were metal utensils of multitudinous shapes, chafing dishes, fish shaped, to contain fish, plates, fowl shaped, to hold fowl, and many formed to contain the nonscript delights which so largely make up a Chinese meal. Near at hand was the counter for what in English would be the cashier, with the counting frame, ink pot and brush and account books." Over this presided a fat, juval looking Calentai who had wielded thinner WATER BALLAD. Come hither gently mooring, Omen bear the quickly over The streams an insightfully flowing. To ponder mournland shame. But vain wren my endeavor To pay then, counters guider, How on, row on, forever I'd have them by my side. "Good trouble gritteth hante then, I seek our fatherland!" "Say when I there have plained then, Dare I demand thy hand!" "A maker's head can never Be hard a point decide; Rew on, row on, forever I'd have them by my side." The happy trivial over. The wonderer omitted to roam For, wished by her home; The cool became too homes; And swift they sang together, As swerving over the table. "Low on through wind and weather, Forever by my sails." -Coloridge STUFFING THE MEMORY. That Faculty Cultivated in Our Schools at the Expense of Other Powers. We have seen a certain class of educational "experts" who attached more importance concerning the knowledge of the authorship of some musty, dusty, rusty, long forgotten book than they did to giving a child any amount of practical knowledge. The educational premium is now for stuffed memories. That faculty and organ is cultivated at the expense of other powers. The "smart" boy or girl is the one who can repeat the most names, dates, words and sentences—and for get them a year afterward. It is no indication of a bright, comprehensive mind, quick to see and quick to act; that it can repeat the dictionary "by heart" after a few weeks study, or commit to memory a thousand sentences in six months. Such over stimulation of memory leads other facilities. This is often proved. The smart scholar in after life very often becomes the literary druide to the very man who when a boy at school was called stupid because he wouldn't learn his lesson. So far as a certain practical success in life is concerned it was fortunate for him that he wouldn't or couldn't make of his brain a stuffed mental sausage case full of names, dates, boundaries, definitions and sentences of whose real meaning if there was any) he knew next to nothing. Had he been thus turned out the premium prize essay memory crammed scholar, the mental rag bag, full of shreds of information, he would have been loggy and top heavy with the load, slow to see chances; incapable of an original plan or idea; and afraid or indisposed to execute anything unless it was previously learned out of a book. Garfield never spoke a greater truth than he did in saying that "any child was fortunate who escaped the abwaw new rampant in our public school education." An intellect is not a mere memory. It is a power to do and accomplish results through imagination out of itself and the The first dish brought on was the famous Natchituck. In cold words, it is a preparation of foul pork, Chinese mushrooms and a meat somewhat similar to a chestnut. In absolute fact, it is the original ambrosia—the true food of the gods, in whose luscious sauce Jove's beard was daily dipped. Its taste and flavor are simply indescribable—English has no synonym for it, adjectives like gobble and insulting. One of the ladies observed, in passing her sancer for a second help, that it was "heavenly." The novelist, to whom the observation was addressed, had no notice reply to make. With his mouth full he could do nothing but reply fervently with his eyes. The poet devoured in silence, he held something for which there is no rhyme. Following this came Poy-yung-darn—an owl of which it may be said that no Oriental chef d'uvre could ever compare with this Oriental work of art in eggs. The Chinese chef had no rival except in his own country. Then came Chow-chop-say, an oriental mixture, after eating of which the poet expressed his opinion that nature had done him wrong in not giving him two stomachs. Marvelous conestibles now followed each other in rapid succession, and the diners were reduced to a condition of silent contentment. It seemed at the point where the menu begins to taper for this to be read from left to right, as if even Chinese ingenuity must have exhausted itself, but there was a knowing twinkle in the eye of the novelist, and his delicately and overfull companions began to suspect that he had prudently reserved a mock for some culinary wonder yet to come. Heralded by birds' nest soup—the kofl of all soups—it came in the shape of Chow-gow men, the apex and pinnacle of all things suitable in this world or the next. It is simply a species of macaroni, so prepared as to leave a part off while a jar is cooked crisp. Tasting it gingerly, the party uttered simultaneous cries of delight, and a complained attack upon the dish, which disappeared with starting rapidity. The bill of fare is not the work of an inky spider, as it seems, but the passport to delights such as Lucullus never knew, even when he dined with himself. Let any one who wishes to know how to dine hand it to a Chinese restaurant—New York World. The Gamut of Disturbation. It was a graduate of Oxford and a man of rare discernment, who said, "no boy of mine shall go to college. It may require considerable more cutlay in money, but my boys will get all their book learning at home." Then followed a confession of experiences that made one's blood tingle. The man had run stuff mental sausage case full of names, dates, boundaries, definitions and sentences of whose real meaning if there was any) he knew next to nothing. Had he been thus turned out the premium prize away memory crammed scholar, the mental rag bag, full of shreds of information, he would have been loggy and top heavy with the lead, slow to see chances, incapable of an original plan or idea, and afraid or indisposed to execute anything unless it was previously learned out of a book. Garfield never spoke a greater truth than he did in saying that "any child was fortunate who escaped the abass now rampant in our public school education." An intellect is not a mere memory. It is a power to do and accomplish results through ideas generated out of itself, and the memory is easy factor to pick up and hold what it needs for the time to carry out such results. Education—from school to draw out indicates the drawing out and exercise of the powers and talents inherent and born with a mind, and not the cramming of a certain department of that mind—Prentice Mulford in New York Star. The Colonel's Monopoly Broken. "It may be a fact," says an Arizona exchange, that the Western Union Telegraph company is a giant and grasping monopoly as charged in some quarters, but it inverted less remains that the building of all lines of this company to Bob Cat City has broken one of the worst minipoles that ever infested our city. We refer to Col. Bolo, who possessing only trees in town with a large strong limb at the proper distance from the ground, has been in the ballet of resting it out to frenching parties at Super meeting it has, of course, been an inspiring sight, and one that spoke volumes for the get-up and get-of our citizens, to see the colonel standing on his well kept lawn, and, when business was brisk, hear him shout: 'Cut down the gentleman! Next.' But nevertheless it has been rather expensive and he could have well afforded to have rented the tree as low as twelve bitor $2. "The Western Union Telegraph company's plant has, however, done away with all this last night One Eyel Smith was adjusted to the cross bar of the pole in front of the post office by the Wikling Workers Vigilance committee, while Yankee Bunker, Pizen Bate and another gentleman, whose name we could not learn, were suspended from the next three poles to the north under the antspace of the Western Improvement society. It is rumored that a prominent citizen of Parahise Valley was seen securely attached to another pole four miles north of here. If it is true the North Side Higher Plane association must have commenced operations, as we trust it has there being a loud demand for such an organization in the valley. This makes Bob Cat City independent of the colonel's tree. He has put up a fine swing for his children from the historic limb which, of course, pleases them, though Mrs Bole being fond of society, finds it somewhat lonely at Hemp Retreat since the various associations stopped meeting there." - New York Tribune Chauncey M. Dupre on Oratory. I think oratory is something that cannot be taught. Undoubtedly a man can learn to be a fair talker. He can, by practice, learn to present his ideas consecutively clearly and in what you may call "form," but there is as much difference between this and an irritation as there is between a skeleton and a living human being clad in sensitive, thrilling flesh. There are millions of skeleton makers millions of people who can express what may be called "the bones" of a discourse, but not one in a million who can clothe these bones. You can no more teach a man to be an orator than you can teach him to be an artist or a poet of the first class. When you teach him there is the same difference between the man who is taught and the man who is what he is by virtue of a natural aptitude that there is between a pump and a spring— The Gamut of Dispiration. It was a graduate of Oxford and a man of rare discernment, who said, "no boy of mine shall go to college. It may require considerable more outlay in money, but my boys will get all their book learning at home." He followed a confession of experiences that made one's blood tingle. The man had run through the Oxford gamut of dispiration—had crowded as much "life" in four years as most rapid rivers manage to comprise into ten. And yet you see I survived it. You see me today, as St. healthy, temperate living, active man capable of accomplishing much more work than the average worker. Ah! But how many of the boys who were with me survive? I tell you, he lifted a hand impressively, "If the fathers and mothers who sent their boys to Oxford knew the temptations they are subjected to, they would rather, much rather; bury them. If the body survives, the chances are the soul is lost, and often body and soul are lost." This from an eminently successful lawyer, and a practical man of the world, naturally excited apprehension. —Pittsburgh Bulletin. Lesson in Definitions. Whittier, who immortalized the vulnerable lady in verse, a number of table articles which formerly belonged to Mrs. Friedchle. Mr. Whittier acknowledged the receipt of the articles some days ago, and stated in his letter that he had become convinced that his poem entitled "Barbara Friedchle" was based upon a supposed incident that had no foundation, but that he was glad to know, nevertheless, that she was a loyal woman. —Chicago Herald. Closing the Oyster's Shell. A device has been patented to keep the shell of the oyster churn from the time it is captured until it is opened and set before an epicure 1,000 miles away. It is a simple piece of wire twisted around the oyster shell with a pair of pliers and then snaked. Then an oyster's mouth and he will preserve him until for weeks—three months in the time claimed. Oysters were recently holed up and may and seem in Denver, where they were opened and found to be of an unusual flavor. —Home Journal. The Science of Electricity. The last twenty years have seen more advance in the science of electricity than all the 6,000 historic years preceding. More is discovered in one day now than in a thousand years of the middle ages, so that literally, "a day is a thousand years." We put it to all sorts of uses. We make it carry our messages, drive car engine, ring our door bell and scare the burglar. We take it as a medicine, light our gas, see by it, hear from it, talk with it, and now we are beginning to teach it to write. The question naturally arises in contemplating this subject: "What is it?" I can imagine the last man on the last day asking this same question: "What is it?" At one time, not long ago, it was supposed to be a fluid, by some two fluids, a positive and a negative. But in this day there are few who do not believe it to be simply a mode of motion; not matter, but a condition of matter, and not a mechanical, but a molecular motion. By mechanical motion is meant a motion of the mass, and by molecular motion is meant a motion of the ultimate particles of which the mass is made up. —Scientific American.
