ANAHEIM GAZETTE. SATURDAY, MARCH 11, 1871. The First producer of Champagne. From an article in the American Brewers' Gazette we extract the following: It was old Father Perignon, of the royal monastery of St. Peter's, Hautvilliers, Champagne, who originated sparkling champagne. He was chosen procureur of the celebrated abbey for the purity of his tastes and the soundness of his judgment of wine. His chief duty was to take charge of the vineyards (of which the monastery possessed the broadest and richest in the country) to receive from neighboring vineyards the tithes of the wines they made, to press the grapes from the monastic vineyards and blend this wine with those that had come to them as tithes. "In the decline of life, Father Perignon," says an old chronicler, "being blind, ordered the grapes of different vineyards to be brought before him, recognized each kind by the taste, and said, 'you must marry (mix) the wine of this with that of another.' In the course of his wine mixings and blending of one quality with another, Dom Perignon, who had already by his skill raised the wine of the holy fathers of the monastery to the greatest perfection, discovered the process of making the wine offervescent, and, as it was utterly impossible to keep in this condition by the old process of a bit of wool steeped in oil, which was the only stopper then in use, he further added to his celebrity by the employment of the cork, which he secured with a string. What a contrast is presented, and the complex and delicate manipulations to which we owe the Tokays, Hocks, Burgundies and Clarets of to day, and what care is necessary to evolve and preserve the nice specific quality of each, distinct from every other.—W. & F. The companent parts are, Buchu, Long Leaf, Cabana Janipur Berrie. Mode of Preparation—Buchu in vacuo. Janiper Berries, by distillation, to form a fine grit. Cababa extracted by displacement with spirits chaitained from Juniper Berries; very little sugar is used, and a small proportion of spirit. It is more palatable than any now in use. Buchu as prepared by Druggists is of a dark color. It is a plant that emits its fragrance; the action of a flame destroys this (its active prinale), leaving a dark and glutinous decoction. Mine is the color of ingredients. The Buchu in my preparation predominates; the smallest quantity of the other ingredients are added, to prevent fermentation; upon inspection it will be found not to be a Tincture, as make in Pharmacopoeia, nor is it a Syrup—and therefore can be used in cases where fever or inflammation exist. In this, you have the knowledge of the ingredients and the mode of preparation.
