ANAHEIM GAZETTE.
SATURDAY, DECEMBER 17, 1870.
County Indentures
The county indentedness of Los Angeles County, as returned by the Treasurer up to November 30, 1870, is $289,262. The amount has accrued in various accounts, as follows: Bonds of issue of 1861, $109,900; bonds of 1864, $34,850; bonds of 1869-70, $136,000; outstanding warrants on Hospital Fund, $8,512; total, $281,262.
There remains in the Treasury the sum of $17,563.56, which is only sufficient to meet the present expenses. This balance is distributed on account of State Fund, Current Expense Fund, Cash Fund, Jail Fund, Road Fund, School Fund, Interest and Sinking Fund. The latter, amounting to $1,053, and is all that stands against the large debt, or which can probably be deducted therefrom.
This debt of over a quarter of a million dollars, is the result of years of successive Bad administration and corruption at Los Angeles. Nothing is owned by the County—it can show nothing for this vast outlay. Who, then, can blame the residents of the growing portion of the County south of the San Gabriel, for asking, praying and fighting for a separation? Certainly no disinterested person, nor yet any honest person, with facts and figures before his eyes, and a sense of justice in his mind.
Although no matter of importance to us it may be stated as in keeping with How to:

Although no matter of importance to us, it may be stated, as in keeping with the general conduct at Los Angeles,
that their City debt is $223,026.11; the interest upon which is, annually, $17,257.77.
Population of the Counties.—From the statistics of population in the counties of California as taken from the Census Marshal's report, it is found that Los Angeles county ranks the ninth there are only eight Counties more populous than this, while there are forty one counties with a less population.
Increasing — The friends of Anaheim Gazette, will be glad to learn that our subscription list is constantly increasing, and with that increase, Anaheim and the resources of its surroundings are becoming more generally known and appreciated.
Another "Coaster."—The San Diego Bulletin has the following:
"Mr. John Walsh, of this city, has gone to San Francisco to bring down the Hatty Porter, a vessel of 60 tons hurried, which will hereafter ply between this port and the ports of Santa Barbara, San Buenaventura, San Pedro, Anaheim and Newport."
The same paper says that the man who lost his pocket-book overboard at Anaheim Landing, was a "dead beat," and did not have any pocket-book.
To Roast A Goose.—As Christmas is approaching we publish the following excellent recipe for roasting a goose:
Chop a few sage leaves and two onions very fine, mix them with a good lump of butter, a teaspoonful of pepper, and two of salt, put it in the goose then split it, lay it down and dust it with flour; if it be a large one, it will require an hour and a half before a good clear fire; when it is cooked enough, dredge and baste it, pull out the spit, and pour in a little boiling water.

Appointment.—At the meeting of the County Board of Supervisors on Saturday last, Don Pablo Pryor of Capistrano was appointed Road Master for the Township of Capistrano authorized to effect certain repairs on roads in that Township.
To Receive Salary.—The Board of Supervisors have granted a Salary of $50 per month to deputy District Attorney Erakino M. Ross, of Los Angeles. Mr. Ross is an able and rising member of the bar, and we are glad to notice that he is now to be compensated for his services, hitherto given to the county gratuitously.
Surveyor.—Geo. C. Knox, Esq., has received an appointment as Deputy Surveyor for this portion of Los Angeles County; and particularly the lands of the Los Angeles and San Bernardino Land Company.
Speed the Plow.—The ground is now in excellent condition for plowing, and many of our farmers are improving the opportunity.
Ratings.—Ker. A. Bland (Methodist), preaches to morrow at 11:30 A.M., and Rev. Mert Achertam (Congregational), as I pray. Services at the Catholic church as usual.
How to Stamp Brandy.
Gzo. W. Bartel, Esq. — Dear Sir: The following regulations regarding the stamping and ganging of brandy from fruit and grapes is very little understood by distillers, and should you deem it important to give them an inscription in your paper, I think you will confuse your parents a great favor, as it is difficult to remember all the particulars required by the regulations. By having a copy of your paper, the distiller will have enough by which he can proceed correctly and expeditiously to mark his casks according to law, and save trouble and annoyance.

Regulations relating to stamping Brandy from fruit and grapes—July, 1876:
On or before the 25th day of each month, the distiller shall notify the Collector of his district, stating the probable number of packages of brandy that will be distilled by him within the month, and probable number of wine gallons, with his request to have the same gumped and marked; and on the receipt of such notice, and after the last day of the month, the Collector of the district shall cause the brandy produced during the month to be guaged, proved and marked, as hereinalter directed, by a United States Gauger. On payment of the tax upon the brandy, as shown in the Gauger's report, and receipt from the Collector of the tax paid stamps, the distiller shall affix the same to the packages in a secure manner.
1. Cancel the stamp, by writing the name of the distiller across the face of the stamp and the date upon which the same is affixed to the package.
2. Paste the stamp securely to the head of the cask.
