PRESERVE PASTRIES Pastry Shells 1¼ cups sifted all-purpose flour ½ teaspoon salt 1 package (3 ounce) cream cheese, room temperature ½ cup shortening 2 tablespoons water Cheese Filling 1 package (8 ounce) cream cheese, room temperature 2 tablespoons milk 1 tablespoon lemon or orange juice 1 teaspoon preserves 1 teaspoon vanilla To Top Off Peach, apricot, plum, raspberry, strawberry or pineapple preserves Prepare pastry. Sift together flour and salt. Beat cream cheese and shortening until smooth; blend into flour mixture until crumbly. Add water as needed to moisten; press particles together into a flat patty. Chill. Roll on lightly floured board to ½-inch thickness. Cut and fit into pans of desired size. Prick bottom of crust with fork. Bake in hot oven (400 degrees F) until done and lightly browned, 6 to 15 minutes, depending upon size. Cool. Pastry on wire rack. Combine filling ingredients; mix well. Fill pastry shell 2-3 full with cheese mixture. Chill. Just before serving top with desired preserves. Pour off drippings. Season with salt and pepper. Add quartered onion. Combine remaining ingredients and bring to a boil. Pour over short ribs. Cover tightly and cook slowly 2 to 2½ hours or until meat is tender. Thicken sauce with flour, if desired. 6 servings. It shouldn't be too difficult to find the same color. If you have a problem finding the same fabric, select a big check for you and a miniature check for Suzy. The same principle applies to polka dots. You can be your own designer. Playclothes are particularly easy to team up, because you can "go way out" in silhouette, fabric, or color.
