Kenny Foundation Increases Medical Scholarship Grants
Minneapolis, Minn.—To help meet the drastic need for medical and paramedical personnel in the field of rehabilitation, the Sister Eriabeffa Kenny foundation has increased its emphasis upon educational and training procedures, according to Marvin L. Kline, national executive director.
Thirty-five scholarships for study at medical centers and universities throughout the nation were announced by the Kenny foundation recently.
Kennel explained the purpose of the scholarships is to encourage universities to interest young medical students to specialize ultimately in physical medicine and rehabilitation.
"The specialist in physical medicine is essential to the conduct of comprehensive rehabilitation programs," he said. "If effective rehabilitation programs are to be made available to all of the victims of neuromuscular disabilities, a greatly accelerated training program for specialists in physical medicine and rehabilitation is essential now."
He pointed out that the Kenny foundation, now conducting its 1958 annual fund appeal, is extending its training and education programs to all fields of rehabilitation, including psychology, social work, physical therapy, occupational therapy, speech therapy and vocational counseling. Public contributions make this program possible, he declared.

CHICKEN FRICASSEE WITH DUMPLINGS
1 5-lb. stewing chicken, cut up
1 bay leaf
1 tbsp. salt
1 large onion, sliced
4 large carrots, cut in 1-inch pieces
¼ tsp. pepper
¼ tsp. thyme
1 12-oz. pkg. corn muffin mix
1 egg
¼ cup milk
¼ tsp. salt
¼ cup chopped parsley
Flour
2 Holland rusks
Wash chicken. Place in heavy saucepan and add ½ quarts boiling water. Add bay leaf, salt and onion. Cover and simmer 40 minutes. Add carrots and cook 2 minutes longer until carrots and chicken are tender. Stir peppers and thyme into broth. Pour enough of the broth into a large heavy skillet to come up 1 inch in skilllet (about 2 cups broth). Heat.
Empty corn muffin mix into a bowl. Combine egg, milk, salt and parsley and stir into muffin mix. Drop dough from a tablespoon into gently simmering broth. Cover tightly and simmer 15 minutes. Remove chicken, carrots and dumplings to warm platter. Strain 2 cups of seasoned broth into saucepan. Combine 3 tablespoons flour and 4 tablespoons cold water. Stir flour mixture into hot broth. Cook and stir over moderate heat until gravity is smooth and thickened. Serves 4.
