Anaheim Gazette Anaheim, Calif., Thurs., July 24, 1909 Frozen Date Delight 2 eggs 1 tsp vanilla ½ c. sugar 3 tbsps. flour ¼ tsp. salt 1 c. finely cut dates ½ c. coarsely chopped walnuts 1 qt. vanilla ice cream Beat eggs with vanilla. Beat in sugar, flour and salt. Stir in dates and nuts. Spread in buttered 9° square pan and bake at 350° (moderate) 25 minutes. When cool, crumble with fingers. Stir quickly into ice cream, freeze in refrigerator trays for an hour at lowest temperature. Reset to normal until serving time. Makes 8 servings. SKILLET VEGETABLES 4 tsps. butter or margarine 1 medium-sized onion, chopped 1½ lbs., yellow squash 1 12-oz. can whole kernel corn 2 c. canned tomatoes ½ tsp. salt 1/8 tsp. pepper Melt butter in an electric frypan set at 360° F.; add onions and cook until lightly browned. Wash squash and cut in thin slices. Add to onions with corn, tomatoes, salt and pepper. Bring to a boil; cover and turn dial to 240° F. Simmer 30 to 35 minutes, stirring occasionally, until squash is tender. Serves 8. ORANGE BAKED HAM 3 oranges Sauterne Wine 1 10- to 12-lb. canned ham Peel oranges; remove white underskin. Slice into rounds. Place in a bowl; cover with Sauterne. Chill several hours. Heat oven to 325° F. (moderate-process takes about 10 minutes). Fold in coconut, nuts, and melted chocolate. Drop from teaspoon onto greased baking sheet. Bake in moderate oven (350°F.) 10 minutes. Makes 2¼ to 3 dozen cookies. STANFORD UNIVERSITY — John W. Brooks, Jr., son of Mr. and Mrs. John W. Brooks of 9342 Hillview Rd., Anaheim, was commissioned an ensign in the Naval Reserve June 14, on graduation from Stanford University. He has been assigned to Pensacola, Fla., for Flight Trianing. He received his commission following four years of Naval Science courses taken at Stanford in conjunction with other Bachelor of Arts degree requirements and summer military training. Rear Admiral George L. Russell, commandant of the Twelfth Naval District delivered the commissioning address. Slice into rounds. Place in a bowl; cover with Sauterne. Chill several hours. Heat oven to 325° F. (moderately low). Remove ham from can. Place on rack in a shallow pan. Heat as can directs (about 2½ hours), 45 minutes before ham is done, lay orange slices on ham; fasten wih toothpicks. Pour wine left in bowl over ham. Continue baking; baste frequently with liquid in pan. BEACON HILL COOKIES 1 cup semi-sweet chocolate chips 2 egg whites ¼ teaspoon salt ¼ cup sugar ¼ teaspoon vinegar ¼ cup tender-thin flaked coconut ¼ teaspoon vanilla ¼ cup chopped walnuts Melt chocolate over hot water. Beat egg whites and salt until foamy throughout. Add sugar, 2 tablespoons at a time, beating after each addition until sugar is blended. Then continue beating until mixture will stand in stiff peaks. Add vinegar and vanilla and beat well.
