HOSPITALITY TEA PUNCH (Makes 2 gallons) 4 cups boiling water ½ cup loose tea 4 cups cold water 2 cups lemon juice (strained) 4 cups orange juice (strained) 1¼ quarts grape juice 2 cups sugar 2 quarts water 1 quart gingerale Bring four cups water to full rolling boil in a saucepan. Transfer from heat. Immediately add tea. Brew 3-5 minutes. Stir and strain into container holding remaining ingredients except gingerale. Just before serving, pour into punch bowl over block of ice. Stir in gingerale. Remove from heat. Immediately add tea and chushed mint leaves. Brew five minutes. Stir and strain into container. Add sugar. Stir until dissolved. Cool. Add fruit juices and watermelon meats. Chill. When ready to serve, place block of ice or ice cubes in watermelon shell. Pour punch over ice. Add sparkling water. Serve in punch cup with sprig of mint. ALMOND-CHICKEN SAUCE 6 large tomatoes 2 c. diced cooked chicken 2 c. diced celery 2 diced hard-cooked eggs ¼ c. alvered almonds ¾ c. sour cream ½ tsp. salt ½ tsp. dry mustard ¼ tsp. sugar ¼ tsp. paprika ¼ c. lemon juice Scoop pulp from centers matoes; chill. Combine chicken, berry, eggs, salt and almonds. Combine remaining ingredients and add to sour cream. Mix dressing with chicken mixture. Fill totoe shells and serve on salad seeds. Serves 6. SPOON BREAD 1 c. yellow corn meal 2 c. milk 1 tsp salt 1 tsp. baking powder 2 tbsps. melted butter or margarine 3 egg yolks, well beaten 1 c. milk 3 egg whites, stiffly beaten Heat oven to 325° F. (moderately low). Combine corn meal and 2 cups milk in a saucepan. Cook over moderate heat, stirring until thickened, about five minutes. Remove from heat. Stir in salt, bakling powder, butter and 1 cup milk. Stir in beaten egg yolks. Fold in beaten whites. Pour into greased 2-qt. casserole.
