FORMIDABLE weapons to fight the nation's No. 1 killer—heart disease—are housed in new cardiovascular laboratory on second floor of Machris Hospital and Cardiac Clinic. Doctor checks complex electronic equipment that makes possible more accurate diagnosing and pinpointing of heart defects. SCHNITZELBANK CHEESE POT 2 Camembert cheeses 1 Liederkranz cheese ½ pound Roquefort cheese ½ pound butter 2 tablespoons flour 2 cups cream 1 cup finely chopped olives ½ cup canned pimiento, drained and chopped Scrape off outer skins of Camembert and Liederkranz cheeses. Put into copper or enameled saucepan (aluminum or iron will cause the mixture to turn black). Add Roquefort cheese, butter, to coast. flour and cream and simmer until melted into smooth mass. Strain mixture through cheese cloth or sieve and work in olives and pimento. Season with cayenne pepper and pack into earthware pot or glass jar. Let stand several days to mellow. Serve as spread on pumpernickel, rye or other bread or crackers. The spread will keep two weeks in refrigerator. DEVILED CHEESE SAUCE FOR VEGETABLES 3 tablespoons butter 2 tablespoons flour ¼ teaspoon salt Few grains pepper 1 teaspoon dry mustard 2 cups milk 2 cups grated American 1 teaspoon grated onion cheddar cheese 1 teaspoon Worcestershire sauce Melt butter; blend in flour, salt, pepper and mustard. Gradually add milk. Cook over low heat, stirring constantly, until thickened. Add cheese, onion and Worcestershire sauce; heat and stir until cheese is melted. Makes 3 cups sauce. DEVILLED STEAKWICHES About 2 lb. flank steak Flour ½ cup shortening 1 large onion, sliced ½ cup water ¼ cup chili sauce ½ tsp. garlic salt 1 tsp. salt 1 tbsp. vinegar 1 tsp. prepared mustard 1 tsp. Worcestershire Grated Parmesan cheese Trim as much fat as possible from flank steak. Halve steak lengthwise, then cut crosswise into 1½ inch strips. Dip each strip in flour. Saute in hot shortening in skillet until well-browned, adding onion slices when browning is almost done. Combine remaining ingredients except cheese. Pour over steak. Cook over low heat, covered until tender about 1 hour. Sprinkle grated cheese. Serve on soft rolls. CRUNCHY CHOCOLATE PUDDING 1 3% oz. pkg. instant chocolate pudding ½ cup coarsely crumbled peanut brittle or chopped peanuts Make pudding as package directs. Fold in brittle or peanuts and chill until serving time. Makes 4 servings. HAM 'N PINEAPPLE CASSEROLE Cook ¼ cup diced green pepper and 2 tablespoons grated onion in ¼ cup water until tender. Stir in 1 tablespoon prepared mustard, ¼ teaspoon salt, 2 cups cooked white rice, 1½ cups diced cooked ham and ⅓ cup milk. Simmer, stirring, until most of milk is absorbed. Pour into greased shallow baking dish. Arrange 6 pineapple slices over top. Pour on some melted butter or margarine.
