CHERRY MERINGUE PUDDING 2 cups canned dark sweet cherries 1 cup cherry syrup 3 tablespoons all-purpose flour 1 cup cake flour 2 tsp. baking powder ½ tsp. salt 2 tbsp. sugar 3 tbsp. shortening 1 egg yolk 6 tbsp. milk 2 tablespoons butter or margarine Drain cherries well and pit. Prepare dough by combining 2 cups biscuit mix, ½ cup brown sugar, nuts and ½ teaspoon spice. Stir in milk. Pat out dough in greased 9-inch cake pan; cover with cherries. Sprinkle on topping made by combining remaining ingredients. Bake in 400 degree oven 40 minutes or until cake pulls away from sides of pan. Serve warm. Serves 4 to 6. Divide mixture in half and line bottom of pan. 13 x 9, pour in cherry filling, and cover with remaining half crumb mixture. Bake 25-30 minutes in 400 deg. oven. Filling: Juice from No. 303 can sweet cherries 2 tbsp. cornstarch 2 tbsp. lemon juice 1 tbsp. grated lemon rind 1 No. 303 can sweet cherries, drained and chopped Combine all ingredients except cherries and cook until thickened.
