Thurs., April 24, 1906 Juicy Beef Brisket 3 pounds beef brisket 2 tbsps, lard or drippings 2 c. water 1 tbsp. salt 1 clove garlic, halved ½ bay leaf 6 peppercorns 6-8 whole carrots, scraped 6-8 medium potatoes, pared Brown meat in hot lard or drippings, then add water and seasonings and cook, covered, over low heat until meat is almost fork-tender, about 2½ hours. Add potatoes and carrots and continue cooking until vegetables are tender, 25 to 35 minutes. Remove hot meat and vegetables to platter; strain drippings and thicken for gravy. 6 to 8 servings. SWEET CHERRY DUMPLINGS 1 No. 2½ can light sweet cherries Red food coloring 1 cup biscuit mix 2 tsp. sugar 1 tbsp. shortening ¼ cup milk 1 tsp. lemon rind Pit cherries and heat slowly with the syrup in a 3-qt. saucepan, adding a few drops of red food coloring, if desired. Combine biscuit mix and sugar. Cut in shortening until mixture resembles coarse meal. Combine the milk and lemon rind and add to the biscuit mixture, stirring only until the flour is dampened. Drop by tablespoons on top of the hot cherries. Cover and steam over low heat for 15 minutes. Serve with cream.
