EMERALD RING WITH CURRIED SHRIMP
2 C. water
1 tsp. salt
1 C. smoked white rice
1 C. finely chopped cooked spinach, drained (a 10 oz. pkg. frozen)
2 Upsa, grated onion
½ tsp. black pepper
¼ tsp. chili powder
½ C. butter or margarine(½ stick)
Sauce:
About 1½ tsps. curry powder
About ⅔ C. water
2 cans (10½ oz.) condensed cream celery soup
About 14 oz. shelled, deveined shrimp, raw or cooked
Method:
Put water, salt and rice in 2-qt. saucepan. Bring to vigorous holl, then turn heat down, cover and simmer 14 minutes. Remove from heat and leave lid on 10 minutes. Salt spinach to taste. Stir in rice, onion, black pepper, chill powder and butter or margarine. Press into well greased ring mold. Use as large a mold as possible. Serve immediately. Or make ahead of time and about 80 minutes before serving, place mold in skillet of hot water. Heat until hot through. If desired, spoon rice-spinach mixture into ring on serving plate instead of molding.
Sauce:
To make shrimp sauce, mix curry powder, water and soup in saucepan and add shrimp. Heat 20 minutes or until shrimp turns pink or is very hot. Taste. Add more curry powder if desired. Add water for thinner sauce. To serve, unmold the rice-spinach ring on large platter. Fill center and surround outside with shrimp mixture. A small bowl may be placed in center of ring to hold sauces is very thin. This recipe makes 6 servings.

MEAT AND RICE CASSEROLE CARMEL
(Serves 6)
1 lb. each ground veal and pear
1 onion, sliced
2 (8 oz.) can tomato sauce
1 C. pitted ripe olives
2 C. cooked white rice.
½ C. Burgundy or claret wine
½ C. grated Parmesan cheese
½ tsp. sugar
Salt, garlic salt, pepper to taste.
Pinch each sweet basil and mary.
2 tsps. steak sauce
3 tbsps. salad oil
Flour
Heat oil in large, heavy sieve.

IT AND RICE CASSEROLE CARMEL
(Serves 6)
Bb. each ground veal and pork onion, sliced (8 oz.) cans tomato sauce.
C. pitted ripe olives.
C. cooked white rice.
C. Burgundy or claret wine.
C. grated Parmesan cheese tsp. sugar.
T. garlic salt, pepper to taste each sweet basil and rosemary.
Sps. steak sauce.
Sbps. salad oil.
Oil in large, heavy skillet, add ground veal and pork, and sliced onion. Cook and stir until meat is no longer pink. Sprinkle flour over meat and onion, blend well. Add tomato sauce and California Burgundy or claret. Cook, stirring until mixture thickens. Add seasoning and cheese, stir over low heat until melted. Combine rice, olives, and meat mixture. Turn into greased casserole. Sprinkle extra grated Parmesan over top. Cover and bake in a moderate oven 30 minutes, uncover and bake 15 minutes longer.
STRAWBERRY JAM
Yield: about 11 medium glasses (5½ lbs. jam)
4½ C. prepared fruit (about 2 qts. ripe strawberries)
7 C. (3 lbs.) sugar
1 box powdered fruit pectin
First prepare the fruit. Crush completely, one layer at a time, about 2 qts. fully ripe strawberries. Measure 4½ cups into a very large saucepan.
Then make the jam. Measure sugar and set aside. Add powdered fruit pectin to fruit in saucepan and mix well. Place over high heat and stir until mixture comes to a hard boil. At once stir in sugar. Bring to a full rolling bowl and boll hard 1 minute, stirring constantly. Remove from heat and skim off foam with metal spoon. Then stir and skim by turns for 5 minutes to cool slightly, to prevent floating fruit. Ladle quickly into glasses. Cover jam at once with ⅓ inch hot parrafin.
Redwood trees will be planted along certain stretches of US 101 where these trees do not grow.
