ORANGE CARROTS 12 small carrots 2 tbsps butter or margarine ¼ C. sugar 1 tbsp cornstarch ½ tsp salt 1 cup water ¼ C. orange juice 1 tbsp lemon juice Wash and peel carrots. Cook in a small amount of boiling salted water until tender. Melt butter in a saucepan. Combine sugar, cornstarch and salt. Gradually add orange juice and lemon juice. Add to melted butter and cook over moderate heat, stirring constantly, until thickened. Pour sauce over carrots. Serves 4. Peas and Onions in Potato Nests: Prepare ½ package instant mashed potato as directed on the package. Heat 1 17-ounce can of peas and onions. Form nests of mashed potato on platter with lamb. Spoon in peas and onions. Serves 4. Frosted White Cake Squares: prepare cake from 1 11-ounce package white cake with frost-mix. Bake in pan from package Make frosting and frost cooled cake. Cut in squares. Serves 4. JAR Ingredients: 2½ cups water 1¼ C. uncooked white rice ½ C. butter or margaine 2 red all purpose or cooking apples 2 teaspoons salt ½ C. strained honey Red food coloring (optional) ½ C. strained honey ½ C. chopped pecans 1 tsp. pumpkin pie spice 2/3 C. milk 1 C. firmly packed light brown sugar 1 egg, beaten Method: Put water, rice, and salt in 2-quart saucepan. Bring to vigorous boil over high heat. Turn heat down low. Cover with lid and simmer 14 minutes. Remove saucepan from heat but leave lid on 10 minutes. While rice cooks, melt butter or margarine in 9 inch skillet which can go in oven. Cut about 8 apple slices ¾ inch thick. Cut out core and halve slices. Add honey and apples to butter or margarine. Mix in red food coloring until the apples are tinted desired shade of red. Simmer several minutes until apples are almost tender. Spoon mixture over apples as they cook. Arrange apples so bottom of skillet is covered with slices. Sprinkle with pecans. After rice cooks, stir in pumpkin pie spice, milk, brown sugar and egg. Carefully spoon over apple-nut mixture. Place skillet in pre-heated 325 degree F. oven. Bake about 50 minutes or until rice pulls away from sides of skillet and most of butter or margarine has been absorbed. Remove from oven. Allow to stand 10 to 15 minutes. Cover skillet with serving plate. Invert plate and skillet to turn desert upside down. Serve warm with whipped cream or vanilla ice cream.
