APPETIZERS Egg Roll Pancakes (Maked 12) 1 egg, beaten ½ C. salt ½ C. sifted enriched flour ¼ C. water In a bowl combine egg, salt and flour. Sifter in water to make thin batter. Strain batter into cup. Heat small frying pan (6 in. in dia.) and brush lightly with shortening. Pour 2 tbspa. batter into the pan, swirl pan to coat it evenly with batter and pour surplus batter back into cup. Hold pan over heat for about 30 seconds, or until pancake is set, but not browned. Cook on one side only and turn out onto damp towel. Repeat, first heating pan, as it is heat of the pan that almost cooks cakes. Roll cakes in towel and store in refrigerator until ready to fill. Filling: 1 can crab meat, flaked ½ C. minced celery ¼ cup chopped green onions 2 tbspa. chopped parsley 2 tbspa. soy sauce 1 egg, lightly beaten Shortening for deep frying: Combine crab meat, celery, lions, parsley, soy sauce and pepper. Place spoonful mixture in center of each p cake. Fold three sides of p cake over filling, then roll p cake over filling. Seal open edge with beaten egg and chill until ready to to. Fry rolls in hot deep fat heat to 365° F. for about 4 minutes or until crisp and golden. Soak with mustard.
