SHRIMP MARINAKA
1 lb. shrimp, fresh or frozen
2 tbsps. salad oil
½ C. chopped celery
¼ tsp. garlic salt
1 tsp. oregano
¼ tsp. sugar
½ tsp. salt
¼ tsp. cayenne
¼ tsp. basil
2 tbsps. chopped parsley
1 No. 2½ can tomatoes
Shell and clean shrimp; do not cook. Heat salad oil in large frying pan. Add celery and cook until tender. Add remaining ingredients and cook over low heat until liquid is reduced and mixture is slightly thick, about 30 minutes. Add shrimp. Cover pan and let cook 3 to 5 minutes depending on size of shrimp. Serve with hot fluffy rice. Makes 4 servings.
COTTAGE CHEESE CROWN SALAD
Arrange a small scoop of cottage cheese on crisp lettuce. Cut thin slices from scraped carrots. Press slices around edge of cottage cheese to form crown.
